Orange Vinaigrette

Very Good! Like some others I too added about 1 T of EVOO to help the dressing stick. I also didn't have OJ so I just used a bit of OJ concentrate and water (didn't measure...just by eyeball!). The dressing had just the right amount of tang vs. sweet. I served it over spinach leaves, walnuts, and crumbled gorgonzola. Yum! Thanks for sharing.

Award Winning Soft Chocolate Chip Cookies

The absolute BEST CC cookie I have EVER made!! After reading the reviews, I made the following changes: additional 1/4 cup brown sugar, 1 tsp salt, additional 1 tsp of vanilla, eliminated the nuts, and used 1 bag of semi-sweet chips and 1 bag of milk choc chips. I divided the dough into 4 logs and each log into 16 lumps for a total of 64 cookies. Froze half of the unbaked cookies for an easy treat another day. Baked the rest on parchment paper lined cookie sheets for 10-11 minutes until they were lightly browned but still soft. They puffed up and settled into a nice, soft yet chewy cookie with lightly crisped edges. Devine!!! Gone are the days when the thickest parts of my cookie are the chocolate chips! Thank you, thank you, thank you for sharing. My daughter no longer says that my neighbor is a better cookie baker!!

Easy Sugar Cookies

The cookie tasted good, but they flattened out way too thin and got very crispy...not chewy or soft at all. I baked the first batch too long, but after a day, ALL the cookies were hard as rocks...not just the over-cooked ones. I threw most of them out. Sorry, but I'll keep looking for a good, thick & chewy sugar cookie.

Sarah's Applesauce

Delicious!! I used splenda in place of the sugar, and ended up using a bit of corn starch (1 T cornstarch/1 T water) to thicken the apples & sauce after cooking. I mashed them gently with a potato masher right in the pot and served the chunky apples warm. My daughter even took the left-over 1/2 cup to school the next day for a snack! Thanks for sharing!

Sweet Potato Pie I

Thank you Joyce! I had eaten sweet potatoe pie before, and figured that since I've lived in the south now for 13+ years, it was high time I learned to make one myself. Here's what I did: baked sweet potato and let cool until it was easy to handle, then mixed that and all the other ingredients in my food processor. I used evaporated milk, 1/2 brown sugar, 1/2 white sugar and added 1/2 tsp of ginger and 1/4 tsp of cloves. I agree that the pie came out to be a bit too sweet for my taste, so next time I'll decrease the sugar to 3/4 cup. I poured it into my deep dish pie pan and baked as instructed: though I had to bake for at least 75 minutes before the center was set. Next time I may try to divide it into 2 small pies...to avoid the long cook time. My family thought it was pumpkin pie...and I let them go on like that! I like being able to use a fresh sweet potato instead of the canned pumpkin. Thanks so much for sharing your little bit of the south with me!

Sauteed Apples

Delicious! I used Granny Smith apples that weren't crisp enough to eat out of hand anymore, added 1 tsp of vanilla, and increased the cinnamon to 1 tsp also, and only used 2 tablespoons of butter. I did need to cook them a bit longer than indicated. We really enjoyed this recipe! Thanks for sharing!

Greek Style Potatoes

I didn't follow this recipe completely...so I am rating it on the changes that I made: added oregano and sea salt (to taste), used fresh rosemary chopped very fine (about 1/2 teaspoon), and subbed chicken broth for the water and boullion. I mixed everything (potatoes & seasonings, oil, etc.)together and then added only enough chicken broth to moisten everything (1 1/2 cups would be way too much in my opinion). Roasted them as directed...be sure to start testing at 1 hour if your potatoes are cut into small pieces. Delicious!

Gramma's Old Fashioned Chili Mac

Delicious and filling. I subbed one whole red bell pepper for the 1/2 green one, added 1T of chili powder, and added 1 clove of pressed garlic. I sauted the onions, pepper, celery, & garlic in a bit of olive oil before adding the ground beef, then drained it all and mixed the remaining ingredients (except macaroni)into a crock pot. Set on low for 4 hours wasn't enough time to cook, so I dumped it all in my dutch oven and finished it by letting it simmer uncovered on the top of the stove for another 30 minutes or so while I made the macaroni, set the table, etc. My daughter gobbled it up: a perfect comfort meal after sitting through a day of Frances aftermath! I will try again in the crock pot...perhaps turning it on sooner in the day, or on high. Thanks for sharing!

Chocolate Chocolate Chip Cookies I

DELICIOUS!! Just what a chocolate cookie should be! I omitted the nuts (but will try slivered toasted almonds in the next batch). I also sifted together my dry ingredients because my cocoa powder seemed awfully lumpy, and used 1/2 cup butter and 1/2 cup shortening instead of all butter. These would be good with a variety of chips, and even maybe a bit of chopped dried cherries... yum! They were chewy with barely crisp tops and sides after baking for 9 minutes. My only complaint...they don't make enough! Thanks for sharing!

Mrs. Sigg's Snickerdoodles

I followed the recipe as written, with the exception of adding an additional tsp of vanilla as suggested by another reviewer. I rolled one batch into balls, rolled them in sugar, then pressed them slightly onto the cookie sheet (covered with parchment paper) with the bottom of a glass. These came out of the oven looking "perfect", but were quite thin. The next batch I rolled into balls, and then just baked them without flattening first. They weren't as pretty, but they weren't as thin either. Both seemed as though they would get harder as they cooled, but I sealed them in an airtight container and they remained soft and chewy. The taste was delicious...I could not taste an tartar at all. Everybody liked them but weren't overly enthusiastic about them. Nice change from the standard chocolate chip. Thanks for sharing!

Black Bean Hummus

I'll be honest...I started out looking for a black bean dip to accompany my fajita dinner when I came across this and decided to tweak this a bit to fit what I wanted. I simply opened the can of beans, drained them then dumped them in the food processor, added a LARGE clove of garlic, cumin & salt and blended away. Then I nuked them in the microwave for about 3 minutes and stirred in about a 1/4th cup of salsa...It was just what I was looking for! I love hummus too, so I can wait to try it as written. Thanks for the great recipe!

Chewy Cocoa Brownies

These brownies were easy to make with items on hand and tasted pretty good. They were fudgey, chewy, and had a little bit of a crispy crust on top. My only problem came from following some of the other suggestions to use an 8x8 pan: They were nearly an inch thick, and never did cook all the way in the middle despite baking for over an hour! That's too long to wait when you are craving chocolate!! I did add a handful of chocolate chips as did others, and they didn't even melt in the center of the pan! Next time I will try spreading them in a 9x13 pan and see what happens.

Chinese Pork Chops

Groovie Smoothie

This comes pretty close to my favorite smoothie. What I do differently is: freeze my chunks of banana as well as strawberries, blend with 1 container of any flavor lowfat/nonfat yogurt and sub 1/2 cup OJ for the milk...also add Splenda and vanilla extract to taste...Delicious!! Try it...you'll be hooked!

Montreal Peppered Steak

Delicious! I too, added the juice of one lemon and marinated my ribeye steaks for about 9 hours. Juicy, tender, and flavorful with each bite. My hubby didn't even need A1! I will probably cut back on the olive oil next time...I don't know that it needed that much. Thanks for sharing...we've always loved the Montreal Steak Seasoning on various meats...this combo makes a tremendous steak!

Bourbon Whiskey BBQ Sauce

Delicious! I will never buy bottled BBQ sauce again. I especially liked how sauteing the onions in the bourban made them sweet...so when you got a bite of onion it was like a flavor burst in your mouth! I added more hot sauce to half the batch for the adults and less hot sauce for those with more sensitive taste buds. I also cooked one batch in a skillet as indicated, and another batch in a sauce pan, and preferred the sauce pan since the BBQ sauce didn't get quite as thick. Slathered the sauce on my buddies excellent homemade smoked ribs and we had a super bowl feast. Thanks for sharing!

Chocolate Cherry Biscotti
