Cranberry Sauce Chicken II

Very easy and tasty! I too mixed the onion soup, cranberry sauce, and dressing (used spicey French) together ahead of time to let the onion bits soften and flavors blend. I may cut down on the dressing the next time, because it did make a lot of the sauce. I added some red pepper flakes just before cooking, and it tasted a lot like some of the Chinese chicken dishes I've had. Thanks for sharing! PS...I used boneless, skinless thighs...delicious.

Italian Sausage Soup with Tortellini

Delicious! I used half turkey/half pork sweet Italian sausage, 2 cans of diced tomatoes but otherwise followed the recipe as written. The flavor was wonderful. If you are concerned about salt, you could use low sodium broth. This soup would also be good with spinach instead of zucchini, and just about any shape pasta. Thanks so much for sharing!

Bruschetta I

Try actually putting the sliced bread on a real charcoal grill outside first. Toast each side so it has nice grill lines on it, and so the bread almost is burnt a bit on the edges, not just toasted. The "grilled" bread actually improves the overall taste and makes this more rustic and authentic. It takes extra work, but it's worth it.

Mini Meatloaves

This was very good meatloaf...and this is from someone who has tried A LOT of recipes looking for the perfect one. I divided the meat into only 2 loaves...one with the sauce as written and one left plain. The sauce definitely adds a wonderful flavor dimension and covers up an otherwise odd looking loaf (looks like cheese polka dots on top!) One mistake I made was using regular instead of quick cooking oats...and the meatloaf mix was VERY loose. I crushed some ritz crackers as some other reviewers suggested and added it as a thickener and that seemed to do the trick. It was firm enough when cooked and had a nice texture. I will make this again, but will try making it into 4 or 6 loaves instead of 2. Thanks so much for sharing!

Too Much Chocolate Cake

I wowed my coworkers with this one today! Made exactly as written using the mini choc chips and this cake blew my expectations away: it is very thick and dense, so I thought that it would not rise very much...it did. I was worried that greasing the pan without the usual "flouring" step would cause the cake to stick...it didn't. I thought that the dough (thick like brownies) would never cook in 50-55 minutes...it took 60 minutes in my oven but was VERY moist and delicious! I topped it with the Satiny Choc Glaze from this site (very good and easy also) and filled the center with strawberries. The cake traveled and cut very nicely. A wonderful, easy and impressive cake! Next time, I think I will use another reviewer's suggestion of subbing cooled cofee in place of the water. A winner! Thanks for sharing!

Dee's Roast Pork for Tacos

Oh my oh my! This was GOOD! I used a 2.67# loin roast and decreased the chilis to 1 can, but kept all of the other spice measurements the same. Delicious. It roasted for about 6 hours and was the most tender delicious meat I've eaten for a long time. After shredding it, I mixed it well with the juices, and kept it in the oven on 300 until the rest of dinner was ready. My daughter must have eaten 1/2 pound of it herself. Served it in corn and/or flour tortillas with the usual taco fixings...but truly it tasted wonderful just plain on a corn tortilla. The taste with the corn reminds me of tamales. So, so good and so, so easy. This would taste good with beef also, I think. I too, like Charley's Mexican Beef from this site...but this might become my new favorite taco meat!

Molasses Sugar Cookies II

My husband asked for "soft ginger cookies" like his mom used to make for Christmas. While she was looking in her files, I found a ginger cookie recipe from this site that was very good: chewy, but very flat, and not exactly like the cookies my husband wanted. I finally got the recipe and made it...and now I find the recipe posted here! It is fabulous. The dough is very stiff, but it is very managable if using a stand mixer. The only difference was that my recipe didn't indicate that the dough should be chilled so I bake them right away. The dough was not at all sticky as I had feared, but rolled very easily into balls. I baked for 9 minutes, and they came out perfect with chewy centers, crispy edges, and a beautiful crackled top. They were very lofty just coming out of the oven, but did fall some as they cooled...but they still weren't as flat as the other recipe I tried. I used butter flavored shortening and have eaten entirely too many of them already!

Parmesan Chicken

I've been using this recipe (with a slight variation) for many years. Instead of frying, I bake it in the oven. Melting the butter and adding it to the breadcrumbs BEFORE you bread the chicken helps make the coating crispy in the oven. I also vary the spices depending on what I'm serving...sometimes more thyme, basil, oregano, garlic. Bake for 30 minutes or so, at 375. Always very good, tender, and juicy. Also makes good chicken strips and nuggets.

Big Soft Ginger Cookies

Delicious and easy! I chilled the dough overnight in the fridge, since I was making several different types of Christmas cookies at the same time. Soft, chewy, spicy...wonderful. I did use butter instead of margarine, and intended to use OJ instead of water but forgot...still delicious! A new favorite in our house. Thanks for sharing!

Quick and Easy Chicken Noodle Soup

I was so suprised at how flavorful this soup was...for being as quick and easy as it is! The basil and oregano (I'd never thought to use in chicken soup) really added a nice dimension to the flavor. Next time I'll try the frozen egg noodles for a REAL taste like homemade treat!! Thanks for sharing!

Baked Teriyaki Chicken

Delicious and easy!! I made the sauce earlier in the day, used a whole cut up chicken, and marinated it for a few hours in the fridge. Also, since I was out of ginger, I used some candied ginger slices that I diced very fine...it worked wonderfully. I baked it in a clear glass 9 x 13 dish...and it really wasn't that difficult to clean since I let it soak while we were eating this yummy chicken! This is definitely going into the rotation. Thanks so much for sharing and making me look like a good cook!

Chicken-Fried Chops

I've been making this very same recipe ever since I received my crockpot many years ago. It is delicious and the gravy is really good over rice. I don't usually add the water, so the gravy stays a little thicker. I also generally only use 3 or 4 thick chops since there is only 3 of us...then I get the left over chop for lunch the next day. Super easy and delicious!

Cinnamon Coffee Cake II

Made as written (with the exception of subbing a box of sugar free vanilla pudding and pecans for walnuts since that was all I had on hand) and it was delicious! Everyone enjoyed it. Very dense and moist. Easy to make. I might experiment a bit with the topping...the cinnamon/sugar/nuts were good in the middle of the cake, but didn't hold together as well on top. Maybe adding a bit of butter and flour would bit good... Thanks for sharing!

Guacamole

The BEST guac I've ever eaten and I can't believe that I made it! I'm the only avocado fan in my house so I only used 1 avocado, and cut all the other ingredients in half. Definitely taste as you go...I ended up addding more red pepper for more kick, and left out the cilantro completely (didn't have any...don't care for it much). And a big BONUS: because of the lime juice, the guacamole stayed a beautiful green even the next day. I covered the surface of the guac with plastic wrap, then put the lid on the plastic container and I think that helped keep it nice also. Thanks SO much...delicious!
