Best White Icing Ever

Reviewed: Aug. 6, 2009
After adding extra water (2 tbs.) and vanilla (1 tsp.), I got it to the right consistancy. I used butter flavored shortening instead of plain, it gave it a yellowish color but looked great with the pink sprinkles I used.

Strawberry Angel Food Dessert

Reviewed: Jul. 23, 2009
Made this with a few revisions, just because of what I had on hand. Used pound cake (cubed), strawberries and blueberries, just enough glaze to coat the berries (Marzetti's brand tasted pretty good), only 1 cream cheese and 12 oz whipped topping. Layered it cake/topping/berries two times in a trifle bowl and let it sit in the fridge overnight. Delicious and received many compliments. Next time I will use the 2 blocks of cream cheese and 16 oz. of whipped topping because it needed more. Oh...and I only used about 1/2 cup of sugar. Thanks for sharing!

Marmalade-Glazed Ham Loaf

Reviewed: Jun. 10, 2009
***Review is for GLAZE ONLY**** I like to use a glaze when I am grilling a ham slice and when I looked in the fridge for ideas...orange marmalade popped out. This glaze was very tasty and easy to make with ingredients commonly on hand. I decreased it to 2 servings to get the right proportions for the ham slice and it was delicious! Now I'll have to try making the ham loaf that goes under it! Thanks for sharing.

Delicious Egg Salad for Sandwiches

Reviewed: May 21, 2009
Simple and tasty. I didn't take the time to add onion...didn't miss it at all. I've made this with both mayo and "salad dressing", and I think I prefer the salad dressing: a bit more tang and reminds me of deviled eggs. Thanks for sharing!

Beer Margaritas

I like beer, I like tequila, I like lime,...so what's not to like??? I've had these with sprite instead of water and they were very refreshing. Not really like a traditional margarita, but definitely delicious!

Lemon Herbed Salmon

This is absolutely delicious! However, I completely took out the Breadcrumbs and used olive oil instead of butter, but it was still just as good :). Also I added brocolli, zuchinni, and yellow squash around the baking dish.

Fast Chicken Soup Base

Reviewed: Feb. 23, 2009
What a great way to stretch a food dollar! I buy a pre-cooked chicken at the grocery store 2 or 3 times/month...I love being able to use "all" of the chicken! We usually eat the chicken, I reserve the carcass/skin in a plastic bag in the fridge, then the next day pop it on the stove as written to make the delicious broth. Any left over chicken from the night before gets chopped up and added to the broth at the end. Thanks for sharing!

Cream Filled Cupcakes

Reviewed: Feb. 3, 2009
Excellent just as written. I loved everything about these cupcakes. The texture was just dense enough to provide a good contrast to the filling. I used Ghirardelli cocoa for just the right amount of chocolate flavor: not too sweet. The batter will seem to be very runny but bakes up perfectly. The filling also seemed to be a bit stiff, but is perfect inside the cupcake. I also filled the cupcakes from the top, however I used a medium pastry tip and filled until I saw the top of the cupcake rise...it couldn't have been easier! I topped them off with the "Hard Chocolate Glaze" also on AR...perfect! Lots of compliments and requests for the recipe. I'll never make a plain old boring cupcake again!

Hard Chocolate Glaze

Reviewed: Feb. 3, 2009
Excellent and easy! I used it to cover 36 cupcakes (Cream Filled Cupcakes also on AR, also very excellent by the way). It hardened just to the right consistency so that it didn't crumble when bitten into but also plastic wrap didn't stick on top. I'll be using this on lots of things!

One Bowl Brownies

Reviewed: Jan. 13, 2009
My first review! I've been using all recipes for years but never reviewed. This brownie recipe was that awesome! I had to substitute a few things just b/c I didnt have all of the ingredients it called for. Instead of all purpose flour I used whole wheat flour and I didnt have any chocolate squares so I used 12 tablespoons of cocoa powder. I also didnt have any walnuts so I mixed in some chocolate chips and sprinkled some more on top while it was still in the oven before the top was crusty. I think my whole wheat flour kept it from being too chocolatey. But still fantastic!

Amish Slaw

Reviewed: Dec. 21, 2008
Another "thumbs up" from a 'bugher ex pat. Tastes just like cole slaw from south western PA! Love it. I would suggest either using 2 bags of the pre-shredded angel slaw or cutting down the dressing by half. Thanks for sharing!

Slow Cooker London Broil

Reviewed: Dec. 17, 2008
I liked the sauce but London Broil was the wrong cut of meat for us. It came out hard and dry. I'll use the standard beef pot roast cut next time. It would be great with carrots and potatoes added in. Thanks for sharing!

Pumpkin Cookies V

Reviewed: Dec. 11, 2008
These are very good cake-like cookies, but the frosting is the true winner! It was delicious, easy to make, and it set on the cookies just right so that you could stack the cookies in a container and not have the frosting stick on everything. I think the next time I will add some more of the traditional pumpkin pie spices and maybe cut back a tad on the baking soda, since this seemed to leave a bit of an after-taste to me. Thanks for sharing.

Slow Cooker Ham

Reviewed: Dec. 11, 2008
Good, easy, but nothing special. Used a butt end bone-in ham and covered the top of the crock pot with heavy duty foil since the lid didn't fit securely. Nice alternative if your oven is in use for something else. Lots of options for changing the flavor, also.

Have used this recipe for the past 2 years at our cafe & it turns out perfectly every time. Ice it with a cream cheese/butter icing & sprinkle with toasted pecans. We have customers coming back looking for this bread & have taken plenty of special orders too!!! Definitely a keeper!!

Honeyed Ham Glaze

Reviewed: Jul. 21, 2008
What a great recipe to make on a busy night! Easy to make using standard pantry ingredients, too. I usually grill ham steaks or even smoked pork chops and then brush the glaze on the slices just before they come off the grill. Delicious! Thanks for sharing!

Mexican Corn on the Cob (Elote)

Reviewed: Jul. 18, 2008
This recipe is only the starting point: I strongly suggest that you follow the recipe that SKHOUSTO shared in her review...it is definitely 5 star! It bears repeating: 3 tablespoons fat-free mayonnaise 2 teaspoons fresh lime juice 2 tablespoons finely grated Parmesan cheese 1/2 teaspoon chili powder 1/4 teaspoon ground red pepper 1/4 teaspoon ground cumin 1/8 teaspoon salt 4 ears shucked corn Cooking spray Prepare grill. Combine mayonnaise and juice in a small bowl. Combine cheese and next 4 ingredients (through salt) in another small bowl. Place corn on a grill rack coated with cooking spray. Grill corn 12 minutes or until tender, turning frequently. Remove corn from grill; brush with mayonnaise mixture, and sprinkle with cheese mixture. Serve immediately.

Kickin' Collard Greens

Reviewed: Apr. 13, 2008
Delicious! I've lived in the south for 20 years but this was the first time I ever cooked greens. Very easy and adaptable. I used turnip greens instead of collards (forgot which one I needed when I went to the store), and added extra bacon. I tasted it after letting it simmer for a good long time...and didn't need to add any vinegar or sweetner of any kind. Ate them with Frank's Hot Sauce and cornbread...YUM! Next time I am going to try to season with smoked turkey necks instead of bacon to cut some calories. Thanks for sharing.
