Kickin' Collard Greens

Delicious! I've lived in the south for 20 years but this was the first time I ever cooked greens. Very easy and adaptable. I used turnip greens instead of collards (forgot which one I needed when I went to the store), and added extra bacon. I tasted it after letting it simmer for a good long time...and didn't need to add any vinegar or sweetner of any kind. Ate them with Frank's Hot Sauce and cornbread...YUM! Next time I am going to try to season with smoked turkey necks instead of bacon to cut some calories. Thanks for sharing.

Delicious Ham and Potato Soup

Very good and very easy. I just eyeballed the amounts of onion, celery and ham...and used ham base from a jar instead of chicken broth/bouillion. It thickened up very nicely and had great flavor. My daughter didn't even want cheese added to hers...it was that flavorful! Thanks for sharing.

Cranberry Sauce Chicken II

Very easy and tasty! I too mixed the onion soup, cranberry sauce, and dressing (used spicey French) together ahead of time to let the onion bits soften and flavors blend. I may cut down on the dressing the next time, because it did make a lot of the sauce. I added some red pepper flakes just before cooking, and it tasted a lot like some of the Chinese chicken dishes I've had. Thanks for sharing! PS...I used boneless, skinless thighs...delicious.
