Catherine's Pickled Blueberries

Reviewed: Aug. 25, 2009
I am not a fan of pickled things; however, this was presented to me as a chutney so that I would try it! The trick worked. Very flavorful and great with cheese and crackers. I think it would also work well with grilled meats and seafood. Caution: this will stain your clothes!

Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill

Reviewed: Aug. 16, 2009
Made this a few months back. Am making it again tonight! Followed the recipe to the letter but for 4 portions. It was perfect. I served it on top of roasted garlic mashed potatoes w/ carmelized onion and a strawberry-fetta cheese salad on baby spinach on the side.

Very Best Blueberry Cobbler!

Reviewed: Aug. 9, 2009
Our family can not get enoough of this cobbler. I used Splenda instead of sugar in the berries and Splenda for baking for the dough. No one knew the difference and my diabetic husband could enjoy this along with the rest of the family. Less sugar is better for everyone . I tried other recipes, but this is the one everyone wants

Pesto Sauce

Reviewed: Jul. 31, 2009
Very good pesto. Pretty color! I used 1/2 cup of oil based on other people's recommendations. It's very garlicky, but that's fine with me. I used just a few almonds because that's all I had on hand.

Gnocchi I

A fancy way to use pantry basics! I used a little less flour, based on other people's recommendations. I had never made gnocchi before, and they came out just right. I served it with pesto sauce.

Classic Peanut Butter Cookies

Reviewed: Jul. 18, 2009
These were terrific! I added 1/4 cup more flour and peanut butter, but other than that went right by the recipe. They turned out just a bit crisp but still tender. I could'nt wait the hour in the frig so I did 20 minutes in the freezer and they turned out great! Thanks for the recipe!

Praline Brownies

I got this recipe from Chef2Chef exactly as written, tried it and got nothing but a gooey mess. Maybe the idea behind the recipe is a sort of upside down blondie. I wonder if baking powder/soda would help?

Mandarin Pork Roast

Reviewed: Jun. 16, 2009
I used a three pound bone in roast instead and followed the directions to a tee. I took the advise of some of the reviewers and doubled the recipe of the sauce for glazing after cutting. I had to cook it a little longer to get it done and my oven cooks at the proper temperature. I also put on the table some cayenne pepper and some sesame oil and it complemented it very well. I will be making this again!

Butter Cream Frosting I

Reviewed: Jun. 13, 2009
I was looking for an easy frosting for a chocolate pound cake (mainly because I wanted to use ingredients I had on hand). I must say, not only was it simple to make, but it was absolutely delicious. I did not have the 4 cups of confectioners sugar that it called for but it was great just the same.

This we pretty good, but didn't seem to have much flavor. Next time I think we will add lemon juice or stick a lemon wedge in with the stuffing.

Chocolate Eclair Dessert

Reviewed: May 22, 2009
Works just as well with a 5.1 oz box of pudding. Also, a tip I read before, and I'll put on here again.... if you don't have time to refrigerate this overnight...dip the graham crackers in milk before layering, this softens them up just as fast as letting the milk from the pudding sit overnight. That tip for me was a lifesaver, bc now it truly is a 10-15 dessert vs a 15 min + fridge time. And I agree w/ the last review. Just zap the frosting in the microwave to pour over the top.

I made this just as listed except I did not have any browning liquid so I used a dash of Worcestershire sauce. The chicken tasted like it came from a restaurant. Very good.

Black Pepper Beef and Cabbage Stir Fry

Reviewed: Apr. 15, 2009
I make this recipe for my family once a month with a few changes. We use ground turkey instead of beef, cook onions in a little sesame oil with cabbage, bell peppers & garlic. I also use chicken or beef broth instead of water. I add Chinese 5 spice over the whole dish at the end, cook for a few mins more & serve over brown rice. My boyfriend's teenager loves it!!

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Mar. 23, 2009
These cookies have got to be the BEST choc. chip cookies I have ever had or baked... Everyone that tries them are AMAZED! And the size of them!!! WOW! I use one of those measuring cups that you draw back to the right amount- like a plunger type. All of the cookies come out to be the exact same size and thickness. I usually double the recipe, pre-measure all of the dough and keep them in the fridge until time to bake them. You may need to bake them a couple minutes longer if they're thicker. Also, I use Ghirardelli chocolate chips. They're quite a bit bigger than others. And to me, they taste better. Again... AWESOME cookies! Thanks for sharing this recipe.
