Mediterranean Stuffed Chicken

This is simply wonderful. I made it for the 1st time last night, I pounded the chicken breast out thin and based on other reviews after rolling it in the butter I rolled it in Italian bread crumbs and after it was in the baking dish put sliced baby bella mushrooms and fresh parmesan cheese on the top oops I almost forgot! I also squeezed fresh lemon juice on it. Mine had to bake for a lot longer than 20 minutes, but I had large breast. I altered the filling amounts to accommodate the amount of chicken I had and used the whole 8 oz f cream cheese and extra feta. I did not alter the garlic or the dill amounts. I served this with the Almond Strawberry Salad & the Lemon Thyme rice from this website. It all went together perfectly! I will be keeping this one to use over and over again!

Lemon Thyme Rice

Made this last night to go with a chicken dish! Only difference was I put in the the rice cooker to cook. Other than that I and the fact that I used fresh thyme I followed the recipe to a T. It is to die for! Will be making this again!

Herbed Marinated Lamb Chops

I've made this a couple of times using fresh herbs out of my garden! I serve it with garlic mashed potatoes and mint jelly and either a salad or fresh green bean's. It is wonderful! My favorite way to cook lamb chops!

Best Ever Banana Bread

I am sitting here munching on a slice now. Fresh out the oven...cooling on the rack & I just had to try a taste! WOW!! OMG WOW!!!! Used home made applesauce from this site instead of oil and added a 1/4 tsp of van. This is WOW!

Delicious Apple Sauce

I just finished making this as written and it is really good! It is my 1st time making applesauce and I am doing it to use in a Banana Bread recipe on this site! I used Granny Smith as that is what I had on hand. I will make this one again!

Slow Cooker Pork Cacciatore

I made this for last night! I did not brown the pork chops or pre cook the mushrooms & onions and just put them in the crock pot raw, and I did not have a bell pepper on hand. OTHER THAN THAT I followed the recipe as written. It was outstanding! Both Hubby & I give this a 5 star rating! I did have one little mishap, while adding the Italian seasoning the top came off and 3/4 of the bottle went onto the raw mushrooms and onions! I had to take them out and wash them off before adding them back into the slow cooker. No damage was done! I served this on top of Spaghetti noodles with Fresh Italian bread on the side & a side salad. We did not touch our salad. The bread was perfect for soaking up the sauce on our plates! A big thank you to Sneakyteaky for sharing this with us!

this is delicious, i always add 1 tsp of almond extract to my cherries & pineapples and only use 1 stick of butter, i just spray the dry spots with butter flavored cooking spray

Spinach Muenster Quiche

Less spinach. Less muenster. Less cream cheese and the light kind. Added mushrooms and another egg white. Used shredded cheddar chesse on top and it was good, will make again and would serve to company as well.

Halloween Bloody Baked Rats

Made these Halloween night for guests. I want you all to know that I followed the recipe as it was written and it was wonderful! It made 10 rats. I was afraid that the tails would burn but they did great. I was also concerned that the sauce would be way too sweet. And it is sweet I mean there is a whole cup of sugar in it. BUT, it was wonderful! A couple of the rats had the cheese come out while cooking but it did not effect the flavor. I will be using this recipe again because it made a very moist meatloaf. Would make great meatballs for spaghetti! Oh, I did attach the eyes and the ears before baking. The ears did fine but the eyes were not as vibrent a green as they would have been had I added them after they came out the oven. I served them with ghost mashed potoatoes and ectoplasm balls (green pea's) on the side. It was a big it and they were fun to make.

Spooky Witches Fingers

I made these and followed the recipe for the cookie part as written and they were wonderful! They were plenty sweet enough for everyone who ate them. (ages 12 - 60.) I did add green food coloring. OK, I experimented and attached the almond nail's as it was written for some and with the strawberry preserves for some and also baked with the strawberry already "glued" to the finger. If you decide to bake with the preserves, use parrchment paper because the preserves will melt and makes it difficult to clean your pan. Removing the almonds and using the red gel was simple and no big deal. Don't be afraid to try. About the chocolate chip "warts". I addd a wart on some of the cookies while they were warm and screwed up a few. So here is what I did. If you add warts put it on a warm cookie so it will attach and then put them in the freezer to "set". that was you don't end up with a wart smear instead! I will be making these again. Will use this same recipe for Chritsmas cookies and not make them into fingers.

Christmas Breakfast Sausage Casserole

We love this in my house! I always use 1 1/2 lbs of sausage and the 1/2 lb is hot! The other is regular or sage. I never toast the bread and have made it with different types of bread & it is always good. I always seem to add sauteed onion & sliced mushrooms and use more cheese than is called for.

Round Steak Sauerbraten

I made this for last nights supper. Followed the recipe & used a small fresh cut onion when browning the meat. Doubled the sauce. Once gravy was made I put it a in a crock pot on low for 4 hours or so. Will make this again & again! Served it with red cabbage, Spaetzle (German egg noodles) & Brotchen. (German Bread) Will add mushrooms to left overs for tonight!

I made this last night for Hubby & I. I did as others suggested and broiled the eggplant, did not brown the hamburger in butter; I upped the garlic and used 3 eggs. Everything else was as the recipe stated. I used 3 MED sized eggplants and my onions were a MED. size also. I only say this as I was unsure as to what sizes to use & it was PERFECT! I used a pan that was 8X12 BUT is 4" deep. This made a lot & next time I make it for just the two of us I will cut it in half. As others have said this is company good. I assure you I will make this again. It was better than you would get in a Restaurant!

Newport Clam Chowder

I made this yesterday morning and when it cooled put it in the fridge till supper time. OK, I bought 4 bottles of clam juice and one broke so I used 3. I used 5 cans of minced clam's & 1 large can of whole clams with the juice & I used fat free 1/2 & 1/2. Everything else I did according to the original recipe. It was my first time making a clam chowder and wanted something to thrill my hubby with who is from Maine. This did it. He was amazed and said it was the best clam chowder he had ever had. I loved it! I think the clam juice bottle that broke was a blessing in disguise! I

Apple Stuffed Chicken Breast

This was great, but I added/subtracted quite a bit. I stuffed my chicken with granny smith apples, smoked gouda (sliced thin), sweet onion, and toasted pecans. I also took two suggestions from others: DO sprinkle some allspice on the inside of the chicken and atop your apples (I layered those first), and DO add some fresh tarragon leaves to the sauce, as well as your leftover onion slices and apple (I diced the apple portion I put in the sauce). Also substitute water with chicken broth- I only cook with water when I'm boiling noodles. Riesling is the recommended wine on this dish and it works really well. Get a dry one so you can cook with it AND serve it with this meal.

Carolina Country Style Ribs

Was looking for a new way to prepare some country style ribs and hubby (over my shoulder) saw this one and thought it would be good. Seeing as how we had everything on hand I said "Oh why not". It was easy to prepare. I am startled that we did not like it more. I adore a vinegar based BBQ sauce but this is not what this is. It is a marinade. Very different. Not trying to be harsh but it was almost as if the ribs were pickeled somewhat. I will say that for some reason it was better lastnight when we had the left overs. So seeing as how Hubby picked it out I asked him to give it a star rating and he said 2. Still, it was not bad at all. It's just not our thing.

Beer Cake I

I made this for my son's 20th Birthday! It was a big hit and he is not a real cake fan! I used Yuengling beer & a cream cheese frosting also on this site drizzeled on top. It would be good without any frosting. Will make this again.
