Unbelievably Awesome Barbeque Chicken Pizza

Reviewed: Sep. 27, 2009
I followed the recipe as written and found the marinara/bbq sauce was too runny. If I made it again, I'd cut back on the sauce. I used a pizza crust recipe and made my own instead of the pre-made. Prebaked in a 10" springform pan before topping the pizza and baking again made it much easier to remove.

Tiramisu II

Reviewed: Sep. 16, 2009
OMG - this was absolutely fabulous!! The only alterations I made were from previous reviews: doubled the espresso to 1/2 cup and used 2 Tbsp. dark rum and 2 Tbsp. Kahlua painted on underside of lady fingers with a pastry brush. I also used a springform pan. Next time I'll be layering it in a loaf pan to make more layers and using just the Kahlua and no rum. Everything else is just right! My mothers had requested this for her birthday cake this year and she said it was just as she had imagined it would be! A must to use the mascarpone cheese and to allow flavors to mingle in the refrigerator for 2 days. Also, I didn't even use a full teaspoon of cocoa to sprinkle over the top - a full tablespoon would make it too thick IMHO. This one is definitely going in my recipe box to stay! You will NOT be disappointed - worth the time to make the homemade custard to end up with such an elegant and rich dessert will very little prep work!

Baked Penne with Italian Sausage

Reviewed: Jun. 24, 2009
I haven't even put this together to put in the oven yet and the sauce tastes fabulous! I'll come back after dinner to update the review. BTW - I didn't have tomato sauce so I substituted a 14 oz. jar of pepperoni pizza sauce instead and add some fresh basil. I may just have to use this sauce recipe as my go-to meat sauce recipe! YUMMO!

Mexican-Style Goulash

Reviewed: Mar. 22, 2009
Much tastier than regular old Hamburger Helper, for sure! I used Rotel tomatoes, added a bit of green pepper, taco seasoning and also added a can of pinto beans (as suggested in previous review) to stretch it out a bit. To add a bit more Mexican zip I used Mexican Velveeta for the cheese.

Hasty Chocolate Pudding

Reviewed: Mar. 14, 2009
This pudding recipe is absolutely AWESOME!! I don't think I could go back to boxed pudding again! I used Special Dark cocoa and made ultimate dark chocolate pudding that we loved! You can't ask for a faster dessert than 5 ingredients and 5 minutes in the microwave! Make sure you use a large enough bowl to avoid boil over in the microwave, though! You won't be sorry whipping this delicious dessert up! :-)

Potato Flake Cookies

Reviewed: Mar. 11, 2009
These are super easy - I've not made this particular recipe but I make one just like it using an envelope of buttermilk biscuit mix (Martha White or White Lily) and an envelope of instant potato flakes. I add chopped pecans to my recipe and use vanilla extract. I'll have to give the coconut extract a try in my recipe! :-)

Whole Wheat Banana Nut Bread

Reviewed: Mar. 11, 2009
This banana bread recipe is NOT your typical "whole wheat dry as a bone" banana bread! It stayed moist until the last slice! Bananas too ripe in my house get popped in the freezer to make recipes such as this!

Lighter Fettuccini Alfredo

Reviewed: Mar. 11, 2009
This was fabulous! I used regular cream cheese instead (didn't have the low-fat) and cut the butter to 1/4 cup and it turned out wonderful!! It'll be a keeper for sure and I can now enjoy alfredo without having to go grocery shopping for whipping cream! BTW - the sauce came together in less time than it took to cut the cream cheese into cubes! LOL

Microwave Bread and Butter Pickles

Reviewed: Aug. 3, 2008
WOW!! Pickles that fast...and from a microwave, no less! I took the suggestion of a previous reviewer and placed jarred pickles while hot in the refrigerator and they sealed on their own! Cool! Very good and right on the money for a delicious bread & butter pickle!

Butter Pecan Ice Cream

Reviewed: Aug. 3, 2008
OMG!! This is the abosolute best butter pecan ice cream I've ever tasted! I'm even eating it before it's had a chance to freeze solid! LOL I took a few tips from other reviewers (a) cut the sugar in half (b) used 1 cup cream & 1 cup half & half (c) added more pecans and (d) added a teaspoon of butter extract along with the vanilla! My husband even complimented me (which hardly ever happens ;-) You won't be sorry if you give this ice cream recipe a try! YUMMO!!!

Lime Chicken Soft Tacos

Very good, I took the advice of others & cooked the chicken in the crockpot with the red wine mixture. Then I shredded the meat & served with warm tortillas, carmelized onions, sour cream, & hot sauce of course.

Firecracker Fried Chicken Drumsticks

Reviewed: Aug. 2, 2008
These had a very good flavor. However, the breading started to fall of as other reviewers said. I am experienced at making fried chicken & the batter has never fallen off. It must have something to do with the hot sauce. I would make again if I was sure the breading would stay on.
