Burgundy Pork Tenderloin

I seared the meat with olive oil and then placed in a crockpot on low for 4 hours with portabello mushrooms instead of onion and celery. I also used 1/2 cup red wine and 1 cup beef broth. It was excellent! Very tender.

Creamy Dill Cucumber Toasties

There is absolutely nothing that I would change with this recipe. It's especially perfect for baby showers or gatherings. I sometimes make these for my husband as a pre-dinner snack.

Avocado, Tomato and Mango Salsa

My all-time favorite summer dip. I have been making this for a couple of years and it is awesome. I usually double the recipe and my husband and I can still finish off the whole bowl. I have even had this over grilled chicken and it is fantastic! Great recipe!!

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies

Extremely soft and chewy! The only change I made was that I used 1/2 cup whole wheat flour and 1/2 cup all purpose flour. A big hit with the husband.

Blueberry Coffee Cake I

I used a bundt pan and layered the cake mix, blueberries, topping. The mix was hard to spread so I would definately decrease the flour to 1 1/2 cups. I did increase milk to 3/4 and added an additional egg. I used canned blueberries and 1/2 whole wheat flour. Baked for 55 min. It turned out great..just a little dry.

Gourmet Chicken Salad

This was pretty good. Definitely not the best that I have had, but it is a good recipe! I think what I didn't like about it was the cucumber dressing ~ but I am just not a big cucumber fan. I would try again w/ mayo :)

Chicken Cordon Bleu II

The key is to pound the chicken breasts very thin. This makes them easier to work with. Definitely one of my top meals to make for company!

Chicken Pot Pie IX

Very good and easy! I didnt have the celery seed and did like another reviewer and used thyme and rosemary and also baked the bottom crust for 5 minutes. Highly recommend!

Chicken Marsala

Very good! I eliminated the butter and the olive oil and used Pam spray for less fat (worked really well :)). I didn't use the sherry, either, though and I cut my chicken up into bite sized bits AFTER it had cooked in the mix so that it would be more tender and easier for my kids. Wonderful! Will make again! Thanks!

Grandmother's Buttermilk Cornbread
