BBQ Pork for Sandwiches

We give this a four only because we added some things...but this was a great base to start. We added the beef broth but only had a 10 ounce can, so we added a couple shakes of liquid smoke and about half a bottle of hickory smoke A-1. Put it in the crock pot for fours hours and followed the instructions the rest of the way. It was AMAZING!!!! I would give the meal that came out 5 stars, but because we didn't stick to the recipe exact, I gave it 4...hope that makes sense.

Swiss Chicken Casserole II

I thought it was great and used a few reviewers' comments to make it scrumptious--used cream of mushroom soup, sprinkled chicken with garlic powder, and threw in as much broccoli that would fit. Next time I'll use the crockpot and loads more broccoli!

Tomato, Cucumber and Red Onion Salad with Mint

Sugar Coated Pecans

I doubted my husband when he wanted to get all fancy and make these. I admit I was wrong. These are awesome! We put them in a spinach salad with strawberries, mozerella cheese and a poppy seed dressing.

Chicken broccoli casserole

Is it cheating to give your own recipe 5 stars? But somehow the directions got messed up! Let me clear it up...you do not cook the chicken in the microwave, you boil it until it's done. This has become a family favorite. I always have the ingredients on hand and it's also a good one to make ahead and freeze. My two year old eats it without thinking twice about the broccoli.

Butternut and Acorn Squash Soup

The whole family fussed at me when I set some soup aside, to save for Grandma. They all wanted more, more, more! We cleaned up the pot with a rubber spatula so we wouldn't waste a drop. I have a 20+ year old Braun hand blender that worked like a champ on this soup ... no transferring! We used fat-free cream cheese ... it had been hanging around in the downstairs fridge ... we had all decided it was generally unfit for consumption, but I'm too much a miser to throw anything away. It was FINE in the soup. Nice creamy texture, and saved us a load of fat grams!

Blue Cheese Burgers

I do low carb, so I am always looking for new ideas.... These are fabulous! I only used 2 lbs of ground beef, and kept the other ingredients the same. It netted 6 good sized burgers, and the flavor was awesome. I pan fried these, as it was raining, and though I advise to make sure to spray a non-stick pan with cooking spray, as they will stick, it gave me some good old juicy goo to top the burger with.

Chicken Dumpling Strips

This was a nice recipe for chicken and dumplings. Since I'm a vegetarian, I used vegetable broth and soy chicken strips. I also added celery salt and a little ground mustard seed to the dumplings for added flavor.

Stuffed Butternut Squash

Swiss Cheese 'n' Onion Quiche

Really good taste. I think it was a little too much cheese so you might be able to cut back to 1 1/2 cups - 1 2/3 cups of cheese. I also added spinach and ham. Beware....your stove will have part of the quiche baking at the bottom of it unless you put the pie pan on a cooking sheet.

Family favorite! We actually use shrimp and call these 'Shrimpies'--this recipe is the closest I could find to re-create my step-mom's recipe. They are VERY good with shrimp. I use two cans of tiny shrimp--sounds gross, I know. I also add fresh garlic(1 clove) and a little bit of parmesan for a little "ooh la lah" I would definately never use anything other than old english or real english muffins(don't get store brand they just aren't as good). It makes tons of shrimpies and its really hard not to stop eating them!

Coconut Shrimp I

This is fabulous - just as good as Bahama Breeze. I added the 1/2 cup extra coconut to the batter and it worked great! I have tried it chilling 1/2 hour and all day and it doesn't seem to make a difference. My college student took every last shrimp with her when she went back to school!!!!

Watermelon Salad

Cutting the watermelon is a challenge to be sure, but the flavor of cold watermelon and the great presentation is so worth it. Add a little mint and a dash of salt give it a brighter flavor. I left out the bananas, as they tend to get a little too mushy for my taste. Great, refreshing and delicious fruit bowl. B.J.

Crusty French Bread

I wasn't quite sure what consistency the dough needed to be before baking, and I think I should've kneaded it some more. I was hoping for a nice baguette-style loaf, but it spread out a little bit and didn't get the crunch I was looking for, even with the egg wash. Of course, that could be because I'm a novice at bread making. I also cut down on the sugar and used just 1 Tbs, but it was still a bit sweet.

Blackened Chicken

I used my cast iron pan and seared for 2 minutes on each side, then put the pan and all into the oven for about 8 minutes more. No need to switch to a baking sheet. I had two large chicken breasts, and I cut them each in half and pounded them out so they'd cook more quickly. I also didn't have each of the spices, but I used what I had of them, plus garlic powder, and it turned out great! I'm looking forward to the leftovers over pasta tomorrow!
