Potato Chips

OMG these are soooooooooo good!!!!! And so easy! Who would have ever guessed you can do them in the micro?? I lined micorwave dish with parchment paper. I cooked for 5 mins and then seasoned with season salt. YUMM!!! A keeper!

Taco Seasoning III

Excellent! I was out of taco seasoning pouch one day and we decided we wanted taco salads with ground beef. This ended up being perfect!!! Not sure if I'll buy anymore packets at the store! Yummo!

Twice Fried Fish

Not my favorite! Very unusual. I did change the fish - I used Orange Roughy b/c we were out of Cod. They are both very middle fish so I figured it wouldn't matter. My husband loved the dish and so did my four year old as well! So maybe I'll fix it again just for something different. I LOVE salt and ended up not added as much salt as it called for and thought the recipe still was too salty - so be careful!

Slow Cooker Barbecue Beans

This was not good and a waste of ingredients! This had way too much liquid smoke flavor and desperately needed brown sugar. Unfortunately will not make again even with altered ingredients - it was that bad!!

Best Ever Chicken Casserole

This is absolutely delicious! I didn't have cream of chicken soup so I substituted with cream of mushroom. Once mixture was placed in baking pan I shook a little Mccormicks chicken seasoning over mixture along with a little garlic salt and coarse pepper. Also, used ritz crackers instead of cereal and drizzled the crackers that were on top of casserole with butter. I thought the waterchestnuts added a nice crunch - I diced a whole one into 4 pieces. This is definetly a keeper!!

To Die For Blueberry Muffins

Chicken Tortilla Soup I

This soup is awesome and one of my family's favs! The only change I make to this is using one cup of rice instead of hominy. I just use the quick-cooking rice and add it right to the soup to cook. I make this all the time in the winter. It is very light and flavorful!

BBQ Pork for Sandwiches

I used a cheaper cut of pork for this recipe. It was a pork loin. I followed the directions for crock pot cooking and the meat shredded easily for me. I wish that I had chosen a different BBQ sauce than I did, as the meat needed a little something; maybe an extra zip of flavor? Some sort of seasoning? All in all, it was fairly good and my husband liked it alot.

Scrumptious Salisbury Steak in Mushroom Gravy

This is sooooooooooo yummy! I only made 2 modifications. I added another small can (with juice) of mushrooms for gravy. Also, in the meat mixture in the beginning of forming patties I mixed a little Dale's meat marinade in with it - yum! Wouldn't change anything else. We had this over rice, even my 3 year said he loved it! A great comfort food and keeper! Thanks!!
