Fiesta Pinwheels

I made these for a baby shower we had for someone at work. They were a big hit! My boss had some and told me later "whoever made those cheese roll-up things did a great job!" I used diced red pepper instead of green onion because the onions at the store were awful looking. Delicious!

Lemon Garlic Tilapia

This was pretty good. I would add sea salt next time. I'm not normally a big salt person, but this was almost too 'simple' of a taste for me.

Beth's Spicy Oatmeal Raisin Cookies

One word: ADDICTIVE! I love oatmeal raisin cookies and I was very pleased how these came out. I baked them for some friends who came over and they were gone within a few hours. Very good indeed! Will definitely make again.
