Easiest Spicy Cod

Maybe I shouldn't have used hot salsa. Likely would enjoy better with medium. I baked on a bed of crushed tortilla chips sprinkled with cayenne pepper. Which didn't help the heat rating. My husband topped his with cheese. I served this with tri-color corn pasta.

Slow-Cooked Chili

I have to say that this chili was amazing. I did make a few changes though. I added cumin and red cayanne pepper during the browning process and some more in the slow-cooker. Also, I added 2 jalepenos seeded and chopped and a little parsley to garnish. I think that for my first time ever making chili it turned out fantastic! It had a nice spicy afterbite. We loved it! I will use this recipe for a long time to come.

I recently discovered this recipe in a book that I got. I had never heard of them but my husband loves chocolate and Peanut Butter so I knew it would be perfect. I was having trouble dipping them like the book said so I ended up putting them on the wax paper and spooning the choclate over them---they turned out delicous but not as pretty. I never thought to refrigerate the dough or freeze it so I will definetly try that when I make them again very soon!

Chicken and Red Wine Sauce

I have to say that I have never cooked with wine before. Knowing that I say this. I guess I used too much wine and not enough brown sugar. The chicken was moist, and good(underneath the wine flavor)but it just had no real pizzazz. I would love to try this recipe again, I am just a bit nervous about using the wine. I read from other reviewers that this recipe is too sweet, but I didn't have that problem. In my opinion it was too bitter.

Perfect Turkey

I was, as always, in charge of the turkey this year for Thanksgiving. Well, this year I decided to try something new. I used this recipe(with some of my own tweaks) and it was a hit! I used chicken broth instead of the wine and I also used more thyme than what was called for. Everyone loved the turkey! This turkey was the most tender, most jucy bird I have ever made! I told my brother about the turkey and now he has me making him one especially for him when he comes to visit later this month! Thanks so much for this amazing recipe!

Fried Rice Restaurant Style

I thought that this recipe was easy and delicious! I made some changes to it though. Instead of using water I used chicken broth. Also I added some diced chicken and more veggies. I found that using frozen veggies wasn't a problem! The fried rice turned out amazing!!

This recipe is great---much like my own. However---if you add worchester to the butter and onion mixture---put all the sandwiches in a casserole dish so they are all touching---you'll find the sauce doesn't get wasted as some readers pointed out. I make this on Christmas when we aren't ready for a big dinner!

Baked Pesto Chicken

I cooked this for my family yesterday and they LOVED it! This recipe was quick to prepare, did not have too many ingredients, is completely affordable and tastes great! It has just the right amount of spice, and the chicken comes out of the oven so tender you can cut it with a fork. I could not find frozen pesto sauce though, so I used the pesto you find in the spaghetti isle at the store... it was delish! It will be a new "regular" in our family meals.

I melt the butter add the onion cook, brown, then add the garlic, cook a minute, then add the black beans. cook anout 5 min. then add the cilantro. turn off heat.
