About me:
I am in my mid forties and have had a very unhealthy diet and lifestyle for a great deal of my life. In a desperate attempt to regain control and begin living life instead of just existing through it, I am learning how to cook nutrious meals and have gotten off my couch and started making some of my dreams come true. I've lost about 60 pound in 7 months and have had a new and wonderful experience for every 10 pounds I lost (starting with taking my first skydive)

Easiest Spicy Cod

Maybe I shouldn't have used hot salsa. Likely would enjoy better with medium. I baked on a bed of crushed tortilla chips sprinkled with cayenne pepper. Which didn't help the heat rating. My husband topped his with cheese. I served this with tri-color corn pasta.

Slow-Cooked Chili

I have to say that this chili was amazing. I did make a few changes though. I added cumin and red cayanne pepper during the browning process and some more in the slow-cooker. Also, I added 2 jalepenos seeded and chopped and a little parsley to garnish. I think that for my first time ever making chili it turned out fantastic! It had a nice spicy afterbite. We loved it! I will use this recipe for a long time to come.
