Mango Salsa

I found this recipe to be great except next time I will use only 1 Tablespoon of cilantro. A little goes a long way in my book. We served it on top of grilled tilapia.

Lemon Barbeque Meatloaf

Good and flavorful. My family does not usually eat meatloaf, but I decided to give this recipe a shot. They were surprised by the flavors. Good with a rice pilaf and cheesy spinach.

Waldorf Salad II

I always enjoy this salad at dinner parties and luncheons, but have never made it at home. This is a keeper. I coated the apples in lemon juice, cut back on the mayo, cut out the celery all together, and added more nuts. Tasted just like my nana's salad when I was a kid! Thank you!

Mom's Best Granola

Fabulous base recipe- add what you like or have on hand. Makes a good batch of granola at a fraction of the cost of prepackaged kind. Tastes much better too. I did decrease the bake time and added blueberries (yum). THANK YOU!

Three-Cheese Spaghetti Bake

This is a wonderful change of pace for one of our weeknight standbys- jar spaghetti! A good base recipe- add what you have or like. I added one pound of extra lean ground beef, minced garlic, onion, bell pepper, squash, and eggplant (you have to sneak those veggies in any way that you can). Served with garlic bread (the frozen five cheese kind) and my family praised my fabulous cooking. Thanks for a great recipe!

Black-eyed Peas and Ham Hocks

I have searched for the Perfect Black Eyed Pea recipe each year for New Year's Day. I am not a black eyed pea eater, but my husband is and, being Southern, we have to have this every New Year's Day. I read the other reviews and adjusted the water level- I think this is a common sense issue. Just eyeball the water. When you cook beans that have been soaked, you generally boil them in fresh water that just covers the beans. Same here. Add more water as needed while they boil. I did not use as much ham, but cut it into bite size pieces before serving. I added another bay leaf and kicked up the fresh ground pepper. This dish thickens as it cools, so do not worry about it being too soupy. I did not serve it over rice, but as side dish to oven baked ribs (find the recipe on this site). Of course, there was plenty of sweet cornbread. My husband said this was my best batch of black eyed peas yet (that's 15 attempts- one for every New Year's Day we have been together). Not quite as good as his momma's, but pretty good for a Yankee born wife who doesn't eat black eyed peas.

Oven Ribs

I was very happy to find this recipe- too cold to grill outside, but my family loves barbeque ribs. This was a good how-to-cook-oven-ribs recipe and the three other ingredients were a good jumping off point for creating a very sweet and gooey barbeque sauce. I made more sauce on the stove top (ketchup, brown sugar, ginger, vinegar, worchestershire sauce, ground mustard, a little splash of coca cola) for dipping. All in all a good recipe that yields tender ribs. I will experiment with different flavors next time. *** 02/03/07 Tried this with 3 pounds of bone in chicken breasts. DELICIOUS!

BBQ Pork for Sandwiches

Great base recipe. Using suggestions in previous reviews, I used a whole pork roast, added extra broth, added time to the slow cooker, and made sure we had the barbeque sauce we liked. This was fabulous barbeque and very economical- fed our family of five twice on one roast! Thank you!

Beef Samosas

Spiced Sweet Roasted Red Pepper Hummus

Fabulous recipe. I used Jiffy brand cornbread, made my own bisquits, added minced garlic and jalepenos to jazz it up a little. Don't hold back on the salt and pepper either.

Baked Brie in Puff Pastry

This is a good base recipe- take note of suggestions for using the egg whites to seal the pastry. This is a MUST and not an option or you will have a messy presentation. Feel free to add preserves (I tried raspberry) or different nuts (pecans were yummy).You could go with something completely different (I added pesto to another and sprinkled with pine nuts). The key to this recipe is to make it your own by adding what you like and experimenting with new tastes. Remember to serve with a good red wine and you can't go wrong!

Chocolate Trifle

I made this dessert as the finishing touch of our nontraditional Christmas dinner. It was a little too sweet for our taste. Even my three daughters thought is was pretty rich and they are little chocoholics. I think that this is a great base recipe and will add layers of fresh strawberries, raspberries, or blackberries (or maybe all three!) to try to balance the overwhelming richness of this dessert the next time I make it. Thank you for the great recipe!!!!

Chocolate Layered Pie

Nice smooth pie. Simple enough to whip up on a weeknight, but tastes so good you can serve with holiday dinners too. I think this pie will taste good with other pudding flavors. I am going to try pistachio next. Perhaps a butterscotch as well. Thanks for the great recipe!

Bagel Dip

I have encountered this dip at several get togethers and never wrote down the recipe. I am surprized by the great flavor of this dip each time. I did not add the msg, but did substitute onion powder and garlic powder. I like this with a hearty wheat or rye cracker. You need something to dip that will carry the weight of the dip. I did not try the bread bowl, but will this Thanksgiving!

Beef Nacho Casserole

Good base recipe that you can adapt to suit your tastes or what's in your pantry. I used taco seasoning instead of chili powder, sour cream instead of mayo, and added refried black beans. I served the corn on the side (not everyone likes corn on our family) as well as a boxed Mexican rice. I liked mine scooped on top of some shredded lettuce with extra chips and salsa. Not something I would make for company, but great for a quick weekday meal. We could all use more of those quick, easy, and good recipes!
