Alyson's Broccoli Salad

Reviewed: Oct. 18, 2007
I cut but to 3/4 cup of mayo. Used craisins instead of raisins, added a little shredded cheddar cheese and have used a variety of nuts, pecans, walnuts and sliced almonds. All very good! This is a keeper!

Downeast Maine Pumpkin Bread

Reviewed: Oct. 18, 2007
I do not care for pumpkin bread of any sort. I don't even like pumpkin pie, but my family raved about this bread! I made mini loaves and gave them away during the Holiday season.

This is a great vegetarian side dish. I used chicken broth in place of all the water. It was delicious. It would also be a great main meal, served over some brown rice, maybe with some tofu. Yummy, Indian comfort food.

Served this with couscous, but somehow the couscous absorbed the vinegar taste and that was all I could taste. Maybe leave the vinegar ouT!

Chili Potato Burritos

Reviewed: Jun. 19, 2007
This recipe is a weeknight lifesaver!!! I use a good quality boxed mashed potatoes to make the prep time less than 10 minutes. My family really enjoys this meal. I have started doubling this recipe just so that we can have a few leftovers. Don't add meat and please don't use corn tortillas. It's great just the way it is.

Minced Beef with Black-Eyed Beans

Reviewed: Apr. 17, 2007
I make this wonderful dish each time I have leftover roast beef. In fact, I purposely make to much roast so that we can have this dish! The only way I deviate from this recipe, is to double the ingredients, otherwise, I follow the directions to a “T.” Substitutions and deletions just aren’t right. I serve it atop boiled jasmine rice and my sides are Asma’s choice, warm pitas, raita, and finely sliced onions laced with lemon juice. This dish is F A N T A S T I C!

Salmon Penne with Basil Pesto Cream Sauce, Artichokes, and Asparagus

Reviewed: Apr. 13, 2007
This is an absolutely outstanding dish! I first ate this dish at McCormick & Schmick's Restaurant. Once I tasted it, I had to go home and duplicate it! I've pulled numerous recipes together to come up with just the right combination of ingredients and I did it! This recipe is approximate to the original dish. We love it.

Lori's Famous Crab Cakes

I made these exactly as the recipe directed. I could not get them to hold together to fry. The ingredients were to wet. They came apart in my oil. This was such a disapointment. Such a waste on good crab meat.

Zippy Chicken Corn Chowder

Reviewed: Jan. 30, 2007
This chowder was delicious! I omitted the Worchestershire sauce, and added about a half-cup more chicken broth to make it a bit soupier, and it was great. I'd use milk next time just to cut down on fat, but overall it's a terrific winter dinner recipe.

I really liked this recipe, but we prefer to have chunks so we pureed only a portion of the vegetables. Add some cheese soup to the mix for extra flavo and richness!

Scalloped Potatoes II

Reviewed: Sep. 6, 2006
E U R E K A ! ! ! I agree with another reader, this is so much like the "Original Scalloped Potatoes" I enjoyed as a child. All other recipes have cheeses in them making them an Au-Gratin Potato, which is not a true Scalloped Potato. I would have given this a 5 STAR rating, except for the omission of thinly sliced onions layered between the potatoes. I have been eating these potatoes over 40+ years! And of course you can always add other ingredients to change the casserole to suite your taste!

Pear Pie I

Reviewed: Aug. 15, 2006
This recipe is superb! I was surprised that my picky husband, and unofficial apple pie critic, enjoyed this so much. It was gone the next day. The lemon adds a most wonderful flavor--I even added some zest for extra zip. Yum! Why people are so nuts about apple pie is beyond my comprehension, for we now feel that pear pie is superior in every way! Thanks for the recipe!!

Gourmet Mushroom Risotto

Reviewed: Aug. 11, 2006
I am giving five stars even though I made some alterations, as I'm sure the result would have been just as spectacular the original way. I used 1 full cup of sherry and 5 cups of beef broth in leiu of the white wine and chick. broth. I substituted scallions for the shallots and added 3 cloves sliced garlic. My entire family loved it including my 9 and 4 year old! Thanks!!
