Slow Cooked Corned Beef for Sandwiches

I made this recipe following the directions as given, adding a 2 large sliced onions along with the garlic cloves. I placed the spice packet contents into a square of cheese cloth, along with the quarter cup + of peppercorns and the bayleaves to form a garnet. I cooked the corn beef (on the stove)using Guiness, until it pierced easily with a fork (I found cooking it longer, made it fall apart about 2 to 2 1/2 hours) and we like it sliced rathered than pulled. After the meat was removed, I added potatoes, carrots and cooked til tender. Once the meat was cooled, I sliced thinly with an electric knife. What was left, I stored in the refrigerator and made Reuben's using rye bread, Thousand Island Dressing, and Claussen's sauerkraut with slices of Swiss cheese. Then grilled the sandwiches until bread was nice and toasty brown! Two meals in one and then some! Awesome! Definitely will make again and again!

Sooo creamy and delicious. The sour cream added a nice alternative to the ricotta cheese norm. I used sweet italian sausage for the meat and covered the pan during cooking time but did everything else according to the recipe.
