Country Apple Dumplings

Reviewed: Feb. 18, 2009
These were easy and delicious! I used 2 medium-sized Granny Smith apples but only 1 can of crescent dough - so they were a little more apple and slightly less dumpling. There was still PLENTY of gooey dumpling and my husband LOVED them. I surprised him with them last week (apple anything is his favorite) and the whole pan was gone in one evening!

The Best Rolled Sugar Cookies

Reviewed: Feb. 7, 2009
I made these cookies this past Christmas and they were a hit...even with our chocolate-loving family! I got somewhat impatient with the rolling/cutting process (due to lack of time just before the holidays) so I used the dough in my cookie press and they came out perfect! I frosted some and just sprinkled others with powdered sugar and they were all delicious. I will definitely use this recipe again!

Mom's Zucchini Bread

Reviewed: Feb. 7, 2009
If I could give this 10 stars I would! I have made this many times now and it is my official zucchini bread recipe. All I added was a little extra cinnamon and my husband/family/neighbors devoured it and begged for more! I make at least 4 loaves at a time. When we have an abundance of zucchini in our garden mid-summer I spend an afternoon preparing the zucchini then freezing it in 2C. baggies to pull out and make fresh bread all winter long!

Ricotta Stuffed Squash

Reviewed: Feb. 7, 2009
I loved this recipe - it's great when you have an abundance of squash in the garden! I left out the onion and spaghetti sauce and it was delicious. My husband wasn't quite as crazy about it as I was, but he's more of a meat lover anyway. I served it as a main dish (which is what he didn't like) because it was fairly time-consuming to be just a side dish.

This is more like the Japanese Steakhouse dressings than any other recipe I have tried. It could use some tweaking though. I'll have to experiment and see.

Cake Mixes from Scratch and Variations

Reviewed: Jan. 21, 2009
Used reviewers suggestions by adding 1 1/2 cups milk, used cake flour, and oil instead of shortening. It is moist and very easy. I do wish it had a little more flavor. Definitely not perfect, but it is good. And better the next day.

Japanese Ginger Salad Dressing

Reviewed: Jan. 21, 2009
This was awful. There must be radically different dressings used in Japanese steakhouses across the country or something, because this isn't what I'm used to. Extremely oily. The ginger was overpowered by the oil and the lemon. It was inedible and wasted a lot of good olive oil.

Not the biggest fan of white fish, but trying to branch out. This was great! I would especially recommend this to parents trying to get their kids to eat fish (and not as fattening as fish sticks). Made these one night with turkey cakes as well.. both were a hit... although the turkey did win.

Delicious Artichoke Dip

Reviewed: Jan. 15, 2009
After so much fiddling with different artichoke dips, I still havent found the perfect one. there is a restaurant in SC and GA called Vickery's that has some of the BEST artichoke dip and I always compare to that one... so this is okay... but not great, and not enough artichokes!

Pumpkin Chocolate Chip Muffins

Followed some previously stated changes, have no egg substitute so used 3 eggs, also used 2/3 whole wheat and 1/3 white flour. decreased sugar (no sugar free applesauce)... next time will add more spices (maybe some cloves?)...pretty good in comparison to other pumpkin muffins made in the past

Emily's Famous Chili

Reviewed: Jan. 11, 2009
This is a really good recipe! I didn't use the whole can of chipotles because I knew there were several guest who couldn't handle it. I used ground venison and venison sausage (3 to 1 ratio)and I also added a bottle of beer instead of water. I more than doubled the recipe so I can't comment on the ratios, I just added beans until i got a perfect ratio. So delicious the whole pot was gone by the end of the night.

My hubby requested curry chicken so I tried this recipe and he really loved it. He wants me to kick up the spice in it next time, but he loved the flavors. I think you have to really love curry to try this though. The smell was really strong, but for us it made it that much more enjoyable.

Pecan Pie V

Reviewed: Jan. 2, 2009
Mine never set before I had to serve it, I left it in the oven for way more time than the recipe called for and it still came out runny. I let it set for 30 more minutes to no avail. It was runny but also delicious. I would make this pie well ahead of time. Once it set (and I ate it the next day), it was Incredible

I didn't think I would ever say this, but I think it was just too much chocolate. I might try different flavors - I haven't decided yet. But I won't make the chocolate on chocolate on chocolate again.
