Mama's Best Broiled Tomato Sandwich

Reviewed: Nov. 30, 2008
Painfully simple, but deli / bread company / restaurant quality. Add deli meat and/or sliced cheese for more interest. I wholeheartedly recommend using fresh potuguese rolls as the bread. I also added a sprinkling of onion powder to the mayo mixture. I served this with cream of pumpkin soup on a chilly fall day and it was phenomenal. Looks beautiful too, and tastes like it was a lot more difficult to make. A+ ... you've gotta try this!

Cream of Pumpkin Soup

Reviewed: Nov. 29, 2008
I was completely in mourning after a chain bread/soup company discontinued their fabulous pumpkin soup, but this recipe is a dead ringer for my fall favorite. This soup is great, whether you make it savory or sweet. I've tried it both ways, but prefer it on the savory side. I use a heaping HALF cup of onions and only salt it to taste. I use extra pumpkin pie spices in addition to the spices specified, and I add a splash of buttermilk. The croutons are worth the effort, in my opinion. [Just be careful not to burn them.] I alternate serving it with the croutons, or with a dollop of sour cream and topped with fresh parsley or chives. This is a fantastic soup....don't miss this one!

Yummy Sweet Potato Casserole

Reviewed: Nov. 28, 2008
I made this recipe exactly as written, and it was great! Even my husband (who doesn't like sweet potatoes) said it was excellent. The only change I made was to make it in a 9X9 pan. With the amount of sweet potatoes in the recipe, it seemed to me like it would have been spread too thin if I'd put it in a 13X9 pan. I baked it for an extra 15 minutes, just to make sure the center was done. Thank you for a great recipe that I'll be making every Thanksgiving (and probably throughout the year, lol) from now on!

Apple Pie by Grandma Ople

This pie is insanely good! I'm not one for changing recipes that are already perfect, but I did add 1/2 tsp. cinnamon just because apple pie without cinnamon seems sort of wrong. lol Thanks for a great recipe!

Delicious Ham and Potato Soup

Reviewed: Nov. 15, 2008
excellent soup. I used much more ham than called for. We enjoyed this and you can add whatever spices you want to customize for your family. We used a little cajun seasoning at the table. Everyone enjoyed it!

Corn Dog Casserole

Reviewed: Nov. 10, 2008
This was a good recipe. I halved the ingredients and chopped my veggies very finely. I thought it was a bit dry, I would maybe add a touch of sour cream or butter to the corn bread batter (could have also been my mix, just plain cheap Jiffy!). I think next time, I will also chop the hotdogs into "coins". The bigger chunks were kind of hard for the kdis to manage. BUT....., they did eat this (happily!), so I will tweak a bit more to my family's tastes. Thanks.

Easy Sugar Cookies

Reviewed: Nov. 2, 2008
These cookies are awesome! I made them exactly as written and the whole family ate them up. I took them out of the oven at 8 minutes and they were soft and chewy. I used my cookie scoop that holds 1 1/2 TBS of dough. Yummmmm!!! I will be adding these to my holiday cookie baking this year... :)

Awesome and Easy Creamy Corn Casserole

Reviewed: Nov. 2, 2008
I made this casserole based on the rave reviews and normally I love everything from this site. This, however, was the exception. I love corn, my kids love corn, my husband loves corn... we all hated this. I followed the recipe to a T, but it just isn't tasty enough as it is... maybe if I added cheese and bacon or chopped chiles as others have suggested it would be better, but as is I wouldn't make again. :(

Downeast Maine Pumpkin Bread

Reviewed: Oct. 28, 2008
Great recipe! I substituted half of the vegetable oil the recipe called for and used apple sauce for the other half. I also added a splash of vanilla and added more cinnamon than the recipe calls for. I added two tablespoons of molasses, which lent a nice color and depth of flavor, and sprinkled a fine coating of powdered sugar to the top of the finished loaves. Though I had to bake mine longer than suggested in the original recipe, the end result was worth it - moist, spicy, fragrant, wholesome, and distinctly autumn. Give it a shot!

Pumpkin Bars I

Reviewed: Oct. 24, 2008
I followed this recipe except for adding a little more spices. I didn't care for the 'oil' taste, next time I would use some melted butter or margarine. Also, I baked in 2 9x13s and they were tastey, but very cake-like, not like a bar cookie which I was hoping for. However,, they were still tastey and really cute with cream cheese frosting and candy corn to decorate.

Won Ton Wrapper Appetizers

Reviewed: Oct. 24, 2008
I thought this was excellent! First, you must brown the sausage, so it will be crumbly and you can blot all the excess fat off. I skipped the olives, but added some finely chopped red peppers when I sauteed my sausage. I prepared FRESH ranch dressing, using the Hidden Valley packet, and prepared it with 2/3 cup light mayo and about 1/2 cup of milk. I wound up using about half of this mixture in the sausage and cheese mix. The wontons turned out to be a lot easier than I thought and I found out through experimenting that you DO NOT have to brush them with oil, or oil the pan. I would recommend that you only lightly prebake the shells, because they will become quite brown when cooking with the filling in them. I took this to a girls night and they were all polished off and everyone wanted the recipe. A big hit!!

Holiday Cranberry Salad

Reviewed: Oct. 16, 2008
I used only about a cup of sugar with my cranberries and it was sweet enough. I also added some halved red grapes and skipped the nuts (allergies). I think the crushed pineapple really adds to this recipe....it was very yummy and decadent!

Million-Dollar Pound Cake

Reviewed: Oct. 12, 2008
One of the best cake recipes I have ever made. I agree with "wannabebaker" and added 1 cup milk - made a really moist delicious cake. I also use this recipe for layered decorated cakes (using only vanilla extract) - has great density to hold any kind of frosting and tastes wonderful. Many rave over this one!

Roast Sticky Chicken-Rotisserie Style

Reviewed: Oct. 11, 2008
I'm giving this a 5 start rating for the cooking method, the chicken was delish and very moist. I will make again, for sure.....but this spice blend is very salty. I had read some reviews that warned that....but wanted to see for myself. Next time I will half the salt. I made my chicken with bone-in thighs and they were great. *******update****** used only 2 tsp salt this time around and now the seasoning is perfect for me. I baked leg quarters at 275 for just short of four hours. This recipe is very forgiving, simple and a new family favorite!!

Chocolate Pretzels

Like some of the other reviewers, I couldn't find the circle pretzels. I used the square "waffle" kind. They turned out very cute and the kids loved to help. I am sure I will make these a couple times a year, they are really cute with holiday color m&ms. Right now was perfect for halloween mix m&ms, yum!

Whipped Cream

Delicious, easy, and fast to prepare....not to mention much better for you than those chemicals in a tub they called Cool Whip. You can taste the difference. Make it as sweet or not sweet as you prefer by adding or subtracting the amount of sugar you use.
