Cheesy Broccoli and Vegetable Soup

This was extremely delicious and simple to make. I used a Mexican Cheese blend instead of Velveeta (which I didn't have on hand), and cut up some chicken breast to add to the soup. Very filling! My entire family raved about it.

Gourmet Sweet Potato Classic

This is the recipe my grandmother has made for more than 25 years that i know of.We double everything except eggs and use around three cups or tad bit more of mashed sweet potatoes.We use 1/2 cup milk instead of cream and boil the potatoes and drain like regular mashed potatoes.We don't put salt and add 1/2 tsp nutmeg in with the 1/2 tsp cinnamon instead of 1 tsp cinnamon.And only 1 cup light brown sugar for the topping part(keep in mind we double this recipe) everything else is the same.I don't really even care for sweet potatoes but this right here is one of the best dishes on the table at Thanksgiving and Christmas.

Turkey Mercedes

I have made this several times, with the following changes: I use 1 cup each lemon juice, fresh orange juice, and white wine, and then just put it all in a huge ziplock bag and let it marinate in the fridge overnight. DELICIOUS! I boil the marinade and add it to the pan to roast the turkey. I then rub the turkey with some olive oil. Turns out very moist and flavorful.

Corn Casserole

I make this casserole every thanksgiving.This recipe goes great with turkey dinner,or just about any meat and veggie dinner.If you like corn casserole I think this is tough to beat to be as easy as it is.

Chicken and Dumplings III

I didn't really follow the recipe given. I took everyone else's suggestions. My husband said that the meal was restaurant quality, and he knows his southern foods! My changes were as follows: 2 cans chicken broth, 1 can cream of chicken soup, 1 can cream of celery soup, 1 can cream of mushroom soup, package of 3 boneless, skinless chicken breasts, 1/8 of an onion, minced, 1 Tblsp. butter, 1.5 cans Pillsbury buttermilk biscuits. Combine soups in a crock pot and turn on high heat. Melt the butter in a frying pan and sautee the onions. Add chicken to onions and butter. Cook all the way through. Cut chicken in small pieces and add to crock pot. Start pinching off and flouring thumb-sized pieces of biscuits. The flour keeps them from sticking together and also thickens the broth. Add big can of biscuits first. Wait 20 minutes, then flour and add the can of five biscuits, making sure the dough is small. As the dumplings cook, they will plump. Too big of pieces leads to a doughy, uncooked center. Let cook on high for about an hour to an hour and a half. Turn on low for another 15 minutes, then serve! I did not add peas and carrots to mine. That is optional.

Broiled Tilapia Parmesan

I love this recipe...My Dad used to grill all kinds of different fish when i was a kid, and would make this topping but he'd put chopped green onions in it.20 some odd years later I asked him how he use to make it and he had forgot,or only remember the parmesan, butter, green onoins, and mayo but couldn't remember how much.So thank you very much for the recipe.Now my kids get to enjoy it and bring back some good memories for myself.

Pecan Pie IV

I made Pecan Pie for the first time for a friend of mine who special requested it. After sorting through the recipes on this site, I discovered this one. I will look no further! The pie was incredible! I followed the recipe, but mixed half dark corn syrup with half light corn syrup. I also topped the pie with Emerald's Pecan Pie glazed Pecans. Yummy! It really is an easy pie to make. My husband was requesting another one as soon as he finished off the first. Perfect and delicious pie!

Three Ingredient Peanut Butter Cookies

Parmesan Chicken

This was a hit at my dad's 50th birthday party! He loves Chicken Parmesan and wanted me to cook it for him. This recipe is a keeper! I also baked my chicken in the oven. It came out crispy and just perfect. I added the butter to the breading like someone else suggested to give it a crunchier crust. I also put fresh garlic slices on top of my chicken to give it a little extra kick. This is a recipe that can be experimented with. So good!

Blue Cheese Burgers

I do low carb, so I am always looking for new ideas.... These are fabulous! I only used 2 lbs of ground beef, and kept the other ingredients the same. It netted 6 good sized burgers, and the flavor was awesome. I pan fried these, as it was raining, and though I advise to make sure to spray a non-stick pan with cooking spray, as they will stick, it gave me some good old juicy goo to top the burger with.

Lentils and Rice with Fried Onions (Mujadarrah)

I give this a 4 but my brother gives it a 5. It tastes a lot like the filling in a Mexican beans and rice burrito. I followed the recipe but also added Cumin and chicken stock to the lentils, as others suggested. I used plain yogurt as well, but do think that sour cream would have worked just as well. The only major change I would suggest is 2 or 3 onions instead of 1!

Corny Cheese Toasties

Used Swiss instead of American and added minced, sauteed onions to the corned beef. Really good! The sauteed onions made this so much better (tried it without and was less impressed). Easy to make and a great alternative to grilled cheese or a tuna melt.

Four Cheese Macaroni

I made this as a surprise for my husband last night. He loved it! This was a delicious recipe for traditional-tasting mac and cheese. I made a couple of changes, though. I didn't use an egg, but I added an extra half-cup of half-and-half. I also sprinkled plain bread crumbs on top of the dish before I stuck it in the oven. Changes aren't necessary; I just made it the way I thought my husband would like it best.

Apple Pie by Grandma Ople

I made this to donate to a local homeless shelter to help them raise money for food for their pantry. I did not get to try it, so I made it again for my husband today. It was FANTASTIC! I added a little cinnamon and nutmeg to mine like other reviews suggested. It turned out delicious!
