Shrimp Scampi III

Really good flavor. I used 6 cloves of garlic instead because we REALLY like garlic! I used fresh ground bread crumbs from a day old loaf of french bread and did not need quite as much. This is a really good recipe!

The meat turned out just right. Dense & easy to thinly slice. I wish I’d use a little less oregano as it tasted a bit too strong for me. The sauce was…um…er….unique! Yeah let’s go with that. Extremely unique:o) And there was a heckuva lot of it. A HECK of a lot. Since there’s no chance of me aquiring a taste for such an….interesting sauce, I didn’t keep it. Thanks for sharing:o)

Easy Guacamole

Good recipe, but I added a few ingredients after trying it "as is" first. First, 1 chopped, seeded jalapeno. Second, I use red onion instead of white. Third, add 1/4 cup chopped cilantro, more chopped garlic and more lime juice as needed (I use the squeeze bottle of RealLime). I also add a splash of Crystal hot sauce, but that is personal preference 'cause I like the heat! After these additions, it was 5 stars!

Poor Man's Hamburger Steaks

My family really likes this recipe. I tweeked it a little bit. I substitute 1 egg for the milk. I only used 2/3 the crackers and add some Mrs Dash original seasoning. Most of my family do not like mushrooms so I used just basic jar brown gravy and topped it with yellow onions. I cooked it covered at 350 and then uncovered it for the last 10 minutes and turned up the heat to 425. It really browns the top good.

Cola Onion Pork Chops

Ok I guess I gotta be the first one to say something bad about this recipe. I thought it smelled weird cooking and tasted weird too. The smell stayed in the house ubtil the next day. It was ok but I would not have this again.

Chicken and Herbs

Excellent flavors. Leaves a pleasant taste on your taste buds. We doubled the recipe and spread the extra herb mixture on some potatoes sliced 1/8-1/4 inch. We spread the potato slices on a cookie sheet and basted them with the herb mixture and baked them with the chicken breasts. Due to food allergies we used aluminum foil instead of non-stick spray, which means makes this dish extremely easy to clean up. Serve the chicken and potatoes with steamed veggies such as green beans or carrots.

Cashew Chicken Casserole

I thought this dish was pretty strange but when all said and done it was quite good. Don't think I would serve it to company but it was good for a quick weeknight meal. Might make again, the only change I made was using sharp cheddar instead of the processed cheese.

Spanakopita (Greek Spinach Pie)

I only had about 8 cups of loose spinach (6 cups to a pound) so I made much less filling than the recipe calls for, which suits me fine. Added a couple pinches of dill and salt, left out parsley since I didn't have any on hand. Butter flavored spray was pretty handy to use on the phyllo. I've never worked with phyllo and worried about the drying out, but when I covered it with a damp paper towel the dough got all sticky and gooey! Maybe Florida air is humid enough to prevent that phenomenon. At any rate, the recipe is wonderful - thanks so much for adding it!

No complaints in my household! My 8 yr old even loved it! I did follow the advice of others and used a bit more Panko than called for and did half and half the ketchup with some sweet vidalia onion bbq sauce! Also, I added some chopped onion to the mixture and italian spices. It was fantastic! A new family favorite!

Famous Chicken Francaise

This is my fiance's favorite dish at a restaurant, so he has been begging me to make it. We both made it together and found that this dish is definitely not an easy dish to make. I am rating it 3 because I think you have to do some changes in order for it to be good. We took the advice of other reviews and did the flour-egg-flour-egg. We pounded it very very thin because that is how you get it at a restaurant. There was not enough sauce for the chicken and the angel hair so next time I would probably triple the sauce amount. The dish is suppose to be somewhat soggy so we did simmer the chicken in the sauce mixture for 8 minutes. I also added lots of garlic. I will definitely make again and just continue to tweak it.

Broccoli Chicken Divan

Overall a pretty good recipe. I will probably make it again. I added the worcestershire sauce another review recommended and also cooked my cubed chicken with garlic and onion powder. I also used the cream of chix soup. My Fiance and I thought that the soup was just a little to thick and that was with adding 1 cup of milk. Next time i will only use 3/4 of the can of soup. The pancko bread crumbs added a great crunch!

Savory Cheddar Bread

I'm a big fan of quick breads since yeast scares the heck outta me so I liked this recipe:o) Little bland but that's easily fixed by adding herbs of your choice & using a very sharp cheddar or even a different cheese such as pepper-jack. Good stuff:o)

Garlic-Cilantro Scrambled Eggs

This is a nice variation to the boring scrambled egg. I made it exactly as written - here is what I will change next time I make it: instead of garlic, I will use garlic powder, I will add chopped onion and omit the parm cheese. A little hot sauce, and I think it will be perfect! I eat an egg everyday and was looking for a new way to prepare - this is the perfect canvass to build on in my opinion. (I didn't use the full amount of cilantro)

I thought these were lovely. I made a miniature version & added fresh thyme & garlic chives, topped with some flash-fried Black Forest ham strips & drizzled with truffle oil. You can make these as fancy or as home-style as you like, whatever fits the occasion. Thanks for sharing your recipe:o)
