Tasty Tuna Burgers

These are a wonderful alternative to regular old tuna! I didn't have on hand lots of the ingredients, but the burgers still tasted great. Putting them in the fridge for 30 minutes was a perfect idea; they really were easy to handle! I plan to make these often. I actually used them in a salad-- I cut the burgers up in pieces and tossed them in with the lettuce. It was very good!

Carrot Cake III

I baked this as directed, substituting only walnuts for the pecans. Best carrot cake I've ever eaten. We cut into it the same day, and it was good, but after refrigerating overnight it was perfection. Next time (which will be soon), I'll cut back on the frosting by half to fit my family's preference.

Tex-Mex Turkey Soup

This soup is a definite 5+. I made a few changes to suit personal preference...we are not big tomatoe fans so I skiped the tomatoe soup, instead of canned tomatoes I seeded two large organic tomatoes and cut in small bits, skipped salsa, used fresh parsley from my garden, skipped boullion and instead used 3 cups organic chicken broth and 3 cups water, 3 cups of organic black turtle beans that I boiled for 1 1/2 hours and drained in place of canned beans, 1 cup frozen corn, light sour cream, skipped cilantro because didn't have any, added additional spices and hot sauce. Cooked on high for about 4 hours in crock pot. Before serving I squeezed fresh lime over each bowl; offered choice of recommended topings. As per advice of another reviewer I made my own tortilla chips and squeezed a bit of lime over them as well. Even my ever so picky significant other took a bite and said "this is good"...he even had a small second bowl. Good job, guys, keep em' coming! Happy Holidays!

Baked Corn Pudding

This was a great recipe that was easy to fix. I used corn muffin mix instead of flour, and baked it for one (1) hour instead of 45-50 minutes. The extra 15 minutes in the oven set the custard to a perfect consistency.

Turkey Bacon Avocado Sandwich

My favorite things to eat! Omitted the mayo, lettuce and cheese. Replaced the bread with a toasted bagel and regular bacon with crisp turkey bacon - layered open faced leftover turkey breast, organic avocado, turkey bacon, vine ripe tomatoe and lots of cracked black pepper. Significant other thinks it looked strange to say the least as he munched away on his traditional hot turkey leftovers...but what does he know about good eats! It was exceptional! ...think I will do it again!

Bread Machine Pizza Dough

This is a good basic pizza dough that you can't go wrong with. Try using half whole wheat flour for a different flavor. Top that with garlic cream sauce from this site and some pre-made grilled chicken (for salads) and you have a delicious "gourmet" pizza that tastes like you spent hours preparing it! Add some sun-dried tomatoes to really woo your guests. :)

Grandma's Green Bean Casserole

I actually made this dish twice…pre Turkey Day test. Family said it needed something. So second time around I used 2 bags of frozen French style green beans, additional seasoning - garlic salt and mixed 1 can of Durkee Fried onions with the cheddar cheese. Made the day before so it was ready to pop in the oven. Served 10 and was delish. Will definitely make this again.

Apple Pecan Cornbread Dressing

This is a very delightful dressing but for my taste it needs a little more spice/salt. Next time I will add a little more salt to enhance the flavors and possibly more fresh parsley from my garden. I will make this dressing again. Thanks for the recipe.

Libby's® Famous Pumpkin Pie

An old time classic that I made this year with the input of Muscleman. I made exactly as recipe indicated except I thought I had ground cloves (they were whole) so so I added a little Nutmeg in its place. Less spices do enhance the flavor or the pie. Delicious and a nice ending to a turkey dinner. Thanks all!

No Bake Pumpkin Pie I

This was so easy to make, and has great flavor and texture. Pumpkin pie has been one of those things I dread making because it never turns out quite like I wanted, but this was perfect. I might experiment with it a bit but it definitely goes into the regular holiday rotation. Thank you!

Downeast Maine Pumpkin Bread

I made it with half of a can of Libby's easy pumpkin pie mix, and omitted the spices called for. It was great and easy both with time and the pocketbook. I made one large loaf and 12 muffins. They were delish, and moist!

Easy Strawberry Lemonade

While this was *awesome*, I had to change it a bit to get there. I used strawberries in sugar and pureed them to get the flavor to incorporate over night better. Also, when mixing all the ingredients together, I used 6cups of water instead of the 4 and 1/2. Even when pouring glasses of it tho, I used liberal ice and sometimes added more water because it seemed very thick (almost syrupy). So I'm not sure how much extra water I really added but the fact that I added any says a lot since I'm one of those people who likes super sweet, super concentrated stuff!

Party Punch IX

I gave this recipe four stars because I didn't think it was as wonderful as most reviews make it out to be, but I'm admittedly not a punch person. I've had punches that I do enjoy, but I'm really not a fan of the ginger ale + sorbet/juice/whatever-you-have-on-hand punch kind of person. I made two batches of this to discover that it was MORE than enough so I kept the ice cubes in freezer bags in the freezer.. Any time my husband would fix a drink (tea, juice, soda, etc) he'd pop a few of these in there to add a little something extra. I must admit - the tea version was very good!

Caramel Apple Dip

I was a little frustrated with this recipe since it didn't give a measurement for the caramel and I purchased the "ready to cook" caramel pieces at the store which is nowhere near the size of the bite-sized candies, but I just added the caramel until it seemed like enough.. That being said, once it was all prepared and cooled, it was *incredible*! Just like caramel dip you could find at the store!

Pick of the Piccata Sauce

Pretty Good. Needs a little more zip, but I always try to follow a recipe the first time around. Chopping the capers may have taken away from their tartness... which can be a good or bad thing, depending on your tastes! PERFECT consistency. *I made again, with no artichokes, and it was delicious! From now on I will probably skip them, since i rarely have them on hand!

The Most Incredible Garlic Bread

I have been making garlic bread this way for many years. I got the recipe from a chef. It always gets terrific reviews! Thanks for the recipe and the reminder of how terrific it is ...but you do have to watch it closely at it burns quickly.

Chicken Tortilla Soup V
