Tampa is a great place to eat seafood as the Gulf coast of Florida is abundant with shrimp, flounder, snapper and grouper and then there are freshwater fishes such as catfish and trout in the lakes and rivers nearby. Cuban food is and authentic and abundant with rich flavors and fresh tropical fruits and vegetables. Gardening is great year-round - heirloom tomatoes, strawberries and citrus are easy to find in the produce markets or just along the side of the road. Get your fix of southern food here too with gumbo, crawfish, gator and grits on many restaurant menus.

Pineapple Upside-Down Cake III

I did not like this cake at all..I think it calls for way too much flour because it's very dense, almost like you're eating pudding. (It's definitely not undercooked...just very dense.) Too bad I made it for a luncheon today. :( lol

Key Lime Pie VII

This came out amazing! Graham cracker pie crusts were on sale, so I cheated and bought one premade. I used 2 and 2/3 cans of evaporated milk, and additional 2 tbs of lime juice (I had squeezed 7 Mexican limes by hand and that was just over 3/4 cup). A tip for squeezing limes: roll them around pressing firmly on a countertop, and when you slice in half, the juice practically gushed out with the slightest squeeze. this is SO creamy and so delicious- you gotta try it!! It hold so well, and set beautifully.
