Tampa is a great place to eat seafood as the Gulf coast of Florida is abundant with shrimp, flounder, snapper and grouper and then there are freshwater fishes such as catfish and trout in the lakes and rivers nearby. Cuban food is and authentic and abundant with rich flavors and fresh tropical fruits and vegetables. Gardening is great year-round - heirloom tomatoes, strawberries and citrus are easy to find in the produce markets or just along the side of the road. Get your fix of southern food here too with gumbo, crawfish, gator and grits on many restaurant menus.

Carrot Cake III

I baked this as directed, substituting only walnuts for the pecans. Best carrot cake I've ever eaten. We cut into it the same day, and it was good, but after refrigerating overnight it was perfection. Next time (which will be soon), I'll cut back on the frosting by half to fit my family's preference.

Tex-Mex Turkey Soup

This soup is a definite 5+. I made a few changes to suit personal preference...we are not big tomatoe fans so I skiped the tomatoe soup, instead of canned tomatoes I seeded two large organic tomatoes and cut in small bits, skipped salsa, used fresh parsley from my garden, skipped boullion and instead used 3 cups organic chicken broth and 3 cups water, 3 cups of organic black turtle beans that I boiled for 1 1/2 hours and drained in place of canned beans, 1 cup frozen corn, light sour cream, skipped cilantro because didn't have any, added additional spices and hot sauce. Cooked on high for about 4 hours in crock pot. Before serving I squeezed fresh lime over each bowl; offered choice of recommended topings. As per advice of another reviewer I made my own tortilla chips and squeezed a bit of lime over them as well. Even my ever so picky significant other took a bite and said "this is good"...he even had a small second bowl. Good job, guys, keep em' coming! Happy Holidays!

Baked Corn Pudding

This was a great recipe that was easy to fix. I used corn muffin mix instead of flour, and baked it for one (1) hour instead of 45-50 minutes. The extra 15 minutes in the oven set the custard to a perfect consistency.
