Moist and Savory Stuffing

I just wanted to add that when I make this stuffing, I also add browned, crumbled sage-flavored pork sausage. Mix a couple of tablespoons butter or margarine, extra sage, fresh herbs of your choice into the broth, and don't forget to add chopped walnuts or pecans for some crunch. The celery and onions will add crunch too if not chopped too fine. Can't wait to have Thanksgiving dinner..

Romaine Rice Tuna Salad

So easy and good. I love it this way. I use two bags of Success Jasmine rice(cooks in 8 min. to perfection). Most of the time I use the chopped Romaine, but sometimes spinach. I have also used a big can of chicken breast with the pieces broken up. Add shredded carrot, black olives, and a small tomato chopped. It is best served fresh, but I have found it delicious the next day...just stir it up and serve cold. You could add some crisp-steamed broccoli too. And, if you use chicken, use EVOO, white wine vinegar, and a little yellow mustard all whisked together as the dressing.

it was pretty good, but I did have to add some more spices. I also had a little corn and spinach left over so I threw some of that in there too. I don't think that made much of a difference. but overall it was pretty good.

Deep Chocolate Raspberry Cake

This was more like a brownie than like cake. It was really good, just really rich. We didn't need a lot to be happy. I made triple the filling and used the leftover to top french toast the next morning. I also cooked the filling and added a little corstarch to thicken it.

it was fantastic. I didn't change a thing and didn't need to. I served it with oyster crackers. my husband added some shredded cheddar and onions to it. the next day we put it over spaghetti. it was great.

Cantina Pinto Beans

the pinto beans were awesome. I added a jalapeno pepper and some bacon. First I sauted the celery, garlic, red pepper flakes and onion in a little bit of the bacon grease and some olive oil. This was an excellent dish. I served it with Spanish rice and bacon fried bananas, a different recipe on this site. :)

I made this for my husbands birthday. It was awesome! moist and very easy!! I made strawberry puree from fresh strawberries instead of cherry pie filling, used strawberry flavored geletin and topped with fresh strawberries. My hubby was happy! :)

Basic Ham and Bean Soup

This was FANTASTIC!! my whole family loved it!!! I used half great northern beans and half lima beans just because that is what I had in my pantry. I added half tsp of dried tyme just because tyme always makes soup taste better and I mashed about a cup of the beans half way through to make the soup creamier and thicker. It worked out great. I recommend making this with cornbread and try doing what I learned from my grandparents. They add a little vinegar and chopped raw onions to their bowl of soup right before they eat it. I tried it with this and it was very tasty. :)
