Pizza Pinwheels

Reviewed: Nov. 23, 2009
I made these today after seeing the picture. My 7 year old and hubby both loved them. So easy to make just took half the crescent rolls flaten them out covered them with 3 slices of mozzarella chesse then topped it with the pepperoni rolled it up sliced it into 8 slices and bake. Once you get them rolling up it was nothing to it. Will keep this one for sure and make often. Would be great for carry ins or showers. Then again tailgate parties would also be a great place to serve them. Thanks again for a quick and easy recipe.

Sweet Spicy Pumpkin Seeds

Reviewed: Nov. 22, 2009
Same problem as the other reviewers: my oil and sugar mix separated. I just poured all of it over the pumpkin seeds, but was disappointed with how the sugar (now caramel) made clumps of some of the seeds and didn't seem to coat most of the others. I think the problem was that my seeds had cooled so this recipe should note that the seeds have to be hot or warm, probably straight out of the oven, to stop the caramel from clumping when poured on them. Also, the seeds didn't seem very spicy with the chili powder so I added cayenne to the batch to make it a little hotter (per another reviewer's suggestion). Overall, this recipe has potential, but is woefully incomplete or incorrect as is.

Meatloaf Muffins

Reviewed: Nov. 21, 2009
I liked this entire recipe. But I only rated it four stars, because I would make several changes next time. I definitely like the muffin concept, but it is important to put the muffin pan on top of a cookie sheet, to allow the grease to drain off. Also, the actual recipe was good, but the vegetable soup addition was just 'different' I won't say it was bad, but it definitely had that 'condensed soup' flavor and the vegetable chunks, were a tad unappetizing. So, next time I may use another meatloaf recipe that I like better. Overall, though, not bad. You could cook this recipe 'as written' and still turn out with a good dinner.

The dipping sauce is outstanding. Although my first ever blooming onion didn't turn out like the pictures on here, I will attempt to make it again!

Country-Italian Chicken and Potatoes

Reviewed: Nov. 20, 2009
I just felt like this dish was not too tasty. It was ok, but not great. There was too much sauce and not very much flavor. I did use a different pasta sauce than the recommended Ragu sauce so maybe that would have made the difference, but I think there still would have been too much sauce.

Very easy and delicious. I made no changes and it turned out excellent! As another reviewer said, it's a bit like spanish rice or a (really) dirty rice. Very hearty.

Steak with Marsala Sauce

Reviewed: Nov. 20, 2009
I thought this was excellent with my grilled tenderloins. I didn't have any mushrooms so I just left those out and I added a bit more marsala since it reduced to almost nothing. The flavor was fantastic and I poured some of it over my baked potato too. Great, guilt free sauce since no butter is used.

Super Bowl Bread Bowls

Reviewed: Nov. 19, 2009
I only used the bread bowl part of this recipe to serve Cindy's Awesome Clam Chowder in. It was fantastic!! and so easy. I halved the recipe and it made 3 nice "bowls". The texture was quite nice for the top and the scooped out bread so I broiled the pieces with a bit of low fat butter. YUMMM.. I will be making these quite often. I think they would be great for artichoke dip or creamy shrimp dip. Thank you Darlene for a wonderful, easy recipe.

Country Fried Steak and Milk Gravy

Reviewed: Nov. 18, 2009
This method was perfect and my steaks turned out tender and crunchy at the same time! Perfect in my book. The gravy was good too and I used non-fat milk. I did use a lot less lard than called for but the flavor was still great. Thanks for the great recipe Likestocook.

Low-Fat Corn Bread

Pretty tasty. I was doing a test drive for Thanksgiving cornbread dressing so next time I will definately add more salt. At least a teaspoon. The texture was just right and pretty guilt free since I used egg substitute.

Omelet Biscuit Cups

Reviewed: Nov. 18, 2009
Very tasty! I used the cheap brand of biscuits and used 2 per each of my jumbo muffin cups. I used egg beaters and non-fat milk, 40% reduced fat bacon and fat-free cheddar cheese. No mushrooms and no butter was used. Very yummy and my picky husband even liked them. Fun treat for breakfast.

Amber's Sesame Chicken

Reviewed: Nov. 17, 2009
I liked the method of cooking this but the sauce was way too strong for us. I did double the sauce but it wasn't the doubling that caused it to be too strong, I think it's just the teriyaki & honey in equal amounts. My hubby said to take this out of our menu.. not to his liking.

Crustless Pumpkin Pie

Reviewed: Nov. 17, 2009
This is much too light textured for us. I guess we like the more traditional pumpkin pie. I did lighten it up by using splenda and egg beaters in place of the sugar and eggs. Health wise, it's fantastic but the texture just wasn't for us. I'd also use quite a bit more spice next time.

Skillet Pasta and Beef Dinner

Reviewed: Nov. 17, 2009
This is an incredibly easy dish to make and tastes good. It's like Hamburger Helper, but without paying for an overpriced box of noodles and spices. I'll make again next time I have extra pasta sauce and beef laying around. (Tip: Use whatever pasta sauce you want, not just Ragu!)
