Simply Sensational Truffles

Reviewed: Dec. 5, 2009
I made this with 1/2 fat free cream cheese and 1/2 neufchantel. Next time I make them I think I'll add about 1 cup of powdered sugar in order for them to stick together better and become a bit sweeter. I'm not really into bittersweet chocolate. I did coat them with white almond bark so that added a lot of sweetness that helped.

I beat this for 20 minutes, still just as shiney and deflated as can be. I don't know what went wrong, but this isn't divinity.

Saucy Shrimp

I had this at Bonefish Grill and fell in love. I looked up a recipe on the internet and tweaked it to make it just like what we love. Give this a shot, it's actually easy even with all these ingredients. And you can make it very low fat, I love that part of this recipe.

Cranberry Orange Loaf

Reviewed: Dec. 4, 2009
Very nice loaf. I doubled the recipe and baked in 3 medium size loaf pans. Baked for 55 minutes and they turned out perfect. I did use 1/2 sugar & 1/2 Splenda, also 1/2 margarine and 1/2 applesauce. 1 12oz pkg of cranberries was 3 cups, so perfect for doubling the recipe. I just had to add that my husband said this is some of the best "bread/cake" he's ever eaten. I didn't even think he'd like it because it's a bit tart. Hip-Hip-Hooray!!

Homemade Cream-Style Soup Mix

I really liked the idea of making a homemade version of the cream of __ soups. I've used this to just add into other soups or chowders and it's delicious as it thickens. Thank you for this recipe Miss DeAnn!

Chemical Apple Pie (No Apple Apple Pie)

Reviewed: Dec. 2, 2009
We used this as a science project for our homeschooling family. It was so much fun! For what it is, it's a great recipe. I read many reviewers who said theirs turned out runny. To guard against that, I added 1 tsp of tapioca and allowed to completely cool before slicing. I had nice clean slices. I also used real apple pie spice instead of cinnamon alone.

Cheese Potato Puff

Reviewed: Nov. 30, 2009
I think it would have been better to make my usual mashed potatoes, add a couple to four eggs and cover the whole thing with at least 2 cups of cheese. As it was it tasted like heavy, bland mashed potatoes with cheese melted on top.

Cranberry Sauce

Reviewed: Nov. 29, 2009
This is very similar to the recipe I have used for a long time. Instead of orange juice I use water pretty much follow the directions given. I prefer a softer version of cranberry sauce and by cooking less time[8-10 mins] I have a softer sauce. Less pectin is released and for my tastes, this is just perfect! Love it on leftover turkey [open-faced] sandwiches. Once I made fresh cranberry sauce, I decided it definitely has a much better taste and we prefer that.

Buttermilk Pie IV

Reviewed: Nov. 28, 2009
Wow, this is very good. I used 1 cup sugar and 1 cup Splenda and it's very very sweet. I may cut back the margarine next time to about 1/2 a stick instead of a full stick and I did use fat-free buttermilk. The pie is very rich and yummy. Thanks for a great recipe!

Waikiki Meatballs

Reviewed: Nov. 28, 2009
This was surprisingly easy and delicious! I only used 1 lb of very lean hamburger and ommited the ginger (we both hate the taste of ginger). I used a 20oz can of chunk pineapple and added broccoli, green, red & yellow bell peppers and also some green onions to the saute after the meatballs were done. The sauce was devine just as written and I wouldn't change one thing about it. I thought it would need more soy sauce but this was the perfect amount. You won't be disappointed if you are looking for a good sweet & sour recipe. I think this would be good with sauted chicken breasts also. Thanks so much for a great recipe!

Very nice and juicy. Made a 6 lb breast in about 6 hours, first 2 hours on hi, then on low for the last 4. Very moist. I liked the texture and flavor. Some of the drippings went into the gravy and it made it very yummy.

Eggplant Parmesan II

Hubby gave it 3 stars, I gave it 5 so here it is a 4 rating. I baked the slices at 450 after I'd sweated them using Egg Beaters for the eggs and reduced fat cheeses. I thought it made a great meal but hubby thought it needed some meat and it would be better as a sidedish.

Pizza Pinwheels

Reviewed: Nov. 23, 2009
I made these today after seeing the picture. My 7 year old and hubby both loved them. So easy to make just took half the crescent rolls flaten them out covered them with 3 slices of mozzarella chesse then topped it with the pepperoni rolled it up sliced it into 8 slices and bake. Once you get them rolling up it was nothing to it. Will keep this one for sure and make often. Would be great for carry ins or showers. Then again tailgate parties would also be a great place to serve them. Thanks again for a quick and easy recipe.

Sweet Spicy Pumpkin Seeds

Reviewed: Nov. 22, 2009
Same problem as the other reviewers: my oil and sugar mix separated. I just poured all of it over the pumpkin seeds, but was disappointed with how the sugar (now caramel) made clumps of some of the seeds and didn't seem to coat most of the others. I think the problem was that my seeds had cooled so this recipe should note that the seeds have to be hot or warm, probably straight out of the oven, to stop the caramel from clumping when poured on them. Also, the seeds didn't seem very spicy with the chili powder so I added cayenne to the batch to make it a little hotter (per another reviewer's suggestion). Overall, this recipe has potential, but is woefully incomplete or incorrect as is.
