Cake Mix Cookies I

I made these using applesauce in place of the oil and Egg Beaters for the eggs. I used a milk chocolate cake mix and used Reese's Peanut Butter chips. Baked 10 minutes. Perfect little treats without the guilt! Thanks for this recipe Nicole.

Crispy Chicken Parmesan

This was one of those really good surprise meals. So easy yet so tasty. Here's what I used: 1.5 cups italian Panko crumbs, 2 T fresh shredded parmesan, 1 egg, 2 T. flour, 2 cups spagetti sauce and 3 T shredded mozzerella. I dredged my 6 chicken tenders in the flour and then into the egg. Mixed the parmesan and panko together and then dredged the egg soaked tenders, patting the breading on pretty thick. I did spray the baking sheet and the top of the tenders with Canola oil spray. I baked for about 16 minutes at 375 and then turned the broiler on to really crisp up the top. It was a hit for my picky husband and me so it will definately go into my rotation. Healthy too!

Neat Sloppy Joes

I liked this, but think the ingredients would work better for just one pound of ground beef. It wasn't as moist as I like sloppy joes. However, it had a really great flavor. But if you are going to make it for two pounds, I would suggest doubling the remaining ingredients to moisten it up a bit.

Exquisite Pizza Sauce

Very nice sauce. I didn't have anchovy or marjoram but otherwise followed the recipe. Very tasty but light. I liked the texture on my ciabatta bread pizzas. Not over powering like some other sauces can be.

Ciabatta Bread

Excellent recipe with fantastic texture. Worked out perfectly using my bread machine. I posted pictures of it and I'm using it for pizza crust after baking it. I'm sure this crust will be delicious. I did add about 1/2 tsp of garlic powder to the dough and it's made the bread very nice. I used 1 loaf for our pizzas and the other loaf I cut into some slices to dip in evoo and some seasonings. Woweee.. better than the restaurant!

Chocolate Eclair Dessert

I used coconut shortbread cookies for the graham crackers and that worked out pretty well! I think I'll buy more coconut cookies the next time I make this. I might use coconut pudding next time too.

Simple Carnitas

Very nice flavor. I followed the directions exactly except I put in the slow cooker for about 5 hours on high. Shredded nicely. I liked the flavor infused by the oranges but it wasn't overwhelming. Thanks Ken for a great recipe! Cheap but delicious.

Easy Pumpkin Muffins

Easy Is just the word for these muffins. and the taste well I added more spice I'm a cinnamon fan. also added pecans,and a crumb topping. They are going to Hubby's office. The taste was wonderfull firm and moist. Had some batter leftover so I added oatmeal and made into cookies, light and fluffy real cake like but the grand kids loved them. I did think of adding oil and an egg but held off, glad I did. next time I'm going to use reduced sugar cake mix.

Caramel Pie

I have been making this for years and years. I usually make at least 4 at a time since they take so long, though, mine only take 2 1/2 hours. I put the cans in the pot, cover with water and bring to a boil. Then I start the time, adding water as needed and boil for 2 1/2 hours. I have never had a problem if the water was not covering the cans as long as you don't let the water all go, then it will have a burn taste. Then I put the cans in the sink and pour cold water over till I can handle to cans. Open, pour in a bowl and wisk till smoth and pour into 4 reg baked pie crust. When they cool spred the cool whip and then I sprinkle with either nuts or shaved chocoalt. I think I will try some with some canned apploes in the bottom-caramel apple pie! Personal taste, but I think they are better in a baked crust rather than graham. Also I think they taste a whole lot better tahn O"Charlies pies!

Colleen's Potato Crescent Rolls

These rolls were amazing, very delicious. I didn't form them into crescent shapes because it was so sticky to work with, I just roll them into balls and rise and bake it as directed.

Melt-In-Your-Mouth Meat Loaf

I, too, baked this in the oven at 350 for about 65 minutes. I used the oven because I hadn't really read the directions until it was too late. I will try it in the crockpot next time though. I used Egg Beaters to replace the eggs and fat-free bread crumbs. Instead of the sage I used Greek Seasoning. Next time I think I'll reduce the brown sugar in the topping to 1 tablespoon as it was rather sweet. What gave it the 5 stars was the taste and texture. Perfect cutting meatloaf that stayed together just right. I can't wait to make meatloaf sandwiches tomorrow :)

Northwest Steakhouse Steak Marinade

I had 2 very thin cut t-bones and I smeared the softened butter mixture over (using only 1 tbls of butter for 2 steaks). The flavor was delicious. I cooked on a cast iron grill pan for about 2 1/2 minutest per side, perfectly cooked and great flavor. Thanks for this recipe and next I'd like to try it on chicken.

Smothered Mexican Lasagna

I'm sorry, but this just did not work for me. Ricotta cheese and mexican just don't go together. I tried it, thinking it would be one of those weird combinations that would just 'zing'. But it didn't. I think, if you make this, you should omit the ricotta and eggs and substitute layering some type of mexican cheese in it's place. Possibly mix the mexican cheese with the sour cream and salsa and use it as a layer. Also, you need to spread a little of the meat mixture on the bottom of the dish before beginning your layers. Otherwise, your bottom tortillas will be crunchy and hard, and the others will be soft.

Amish White Bread

Very nice loaf of bread, quite sweet but oh so tasty warm from the oven. I did cut the recipe in half but I still needed to knead in about 3/4 cup extra flour (in order not to be sticky). It rose nice and high. I brushed with egg yolk before baking and put a pan of water into the bottom shelf of the oven to bake along with the bread. The crust was perfect.

Ziti with Tomato-Pesto Sauce

Simple, easy, fast meal for a quick dinner. Nothing amazing, but good and basic. The pesto added a nice flavor, but wasn't overpowering. I used whole wheat penne in place of regular ziti (couldn't find whole wheat ziti) as well as a mushroom & pepper tomato sauce to add a few more nutrients. Adding sliced veggies to the sauce would also make this dish more hearty.

Ground Bologna Sandwich Spread

I used to make this years ago and it works great in a food processor if you don't have a meat grinder. I also use ham for the same thing. I like to use bread & butter pickles but that's your choice. I also grind up some onion into the mix before adding the mayo/miracle whip.
