Easy Pumpkin Muffins

Reviewed: Dec. 24, 2009
These muffins were a mega-hit at my office pre-holiday brunch!! I tried the recipe as written, substituting the yellow cake mix for spice and they turned out pretty well but, as usual, I had to tweek it some more to make it my own. I like a nice, overflowing muffin top so I filled the cups to almost full because the batter doesn't have very much rise to it. I also added some walnuts & dried cranberries to the batter and topped it with a classic streusel topping. I'm now making them as holiday gifts and adding them to my Christmas morning breakfast menu. Soooo easy and soooo delicious!!!

Elk Chili

I made this for 80 people for a Cub Scout camping trip. I halved the brown sugar. This was wonderful. Smooth with a little kick at the finish. It was great. I had people begging to buy the leftovers!

If you really want to bleach out a King Fish soak the fillets in lemon juice and salt with enough water to cover completely over night. This gives you very white fish with a lemon taste.

Simple Mexican Rice

This was simple and very good. I didn't have cummin so I used adobe seasoning. I also didn't have tomato paste so I used a can of stewed tomatoes chopped fine and two big squirts of ketchup. This is a keeper recipe, good for family get togethers. Thanks Elizabeth101

Wonderfully moist. I filled the cups partially then put 1 tablespoon of grape jelly into the center and covered with more batter. Then iced with peanut butter icing. PBJ....yummy

Tiramisu II

OMG this was awesome. Not too difficult to make. I made it in a cheesecake pan and whipped extra topping and added coffee. Then I used it to glue the ladyfingers to the sides. Next time I will add more ladyfingers to the inside. It was a big hit at a dinner party.

EAGLE BRAND® Frozen Peanut Butter Pie

Reviewed: Feb. 24, 2009
This is an easy recipe to make. I used chocolate wafer cookies and butter for the crust, yummy! I ended up making it two weekends in a row for company. Everyone loved it. The first time I used a large pie pan the second time I used pre-made chocolate graham cracker crusts, they were good but not as good as the chocolate wafer cookie crust. Totally recommend for a dinner party during the hotter months. Almost tastes like peanut butter ice cream.

In the south we love a bbq flavor to this recipe, so I added small amt. of liquid smoke, and some left over pork roast. Reminded me of my childhood.

Hawaiian Banana Nut Bread

Reviewed: Aug. 4, 2008
This was absolutely awesome! I made half without nuts and half with nuts. The only problem I had was the one with nuts, the middle would not get completely cooked through. After baking for over an hour, I finally just scooped the uncooked part out of the middle and sliced it and took it to work. Noone even knew. This is a keeper.....a great change from ordinary banana bread.

Grilled Tilapia with Mango Salsa

Reviewed: Jun. 9, 2008
WOW! What a great meal for my dinner party. I enjoyed making the Mango Salsa and because it made so much, I chilled some and served part of it as an appetizer with baked Nachos. It was fantastic. The fish had such a wonderful flavor with the maranade. I found it a little hard to grill becuase Tilapia is somewhat fragile, but I made sure the grill was oiled good and was hot. Some of the fish broke apart which made the presentation a little hard, but that didn't matter because it was so good. I highly recommend this if you like fish, even if you don't it's so mild with the Mango Salsa you wouldn't even know it was fish. Give it a try!

World's Best Lasagna

This was awesome. I made it for my daughters bridal shower luncheon and it was a hit. I actually made the sauce two days before, assembled the lasagna the day before and then heated it before the shower. Simple and very tasty, sure beats my old recipe of all day cooking. Thanks.

Magic Mango Bread

I made this recipe last night substituting 3/4 cup applesauce for the oil and adding 1/2 stick butter (unsalted). Also, I did't add the raisins or nuts only the coconut. Wow, is it moist, almost like mango pudding, but very delicious. I took one to work and it was gone within minutes.

Jay's Signature Pizza Crust

Reviewed: Jan. 9, 2006
I was disappointed with the way the crust turned out. I followed this recipe exactly as it was written. The dough didn't rise. After it was cooked the inside was raw and the outside wasn't crusty. If there are any tips or tricks, please let me know. From the reviews I read, it sounds like it should have turned out excellent.

Creamy Macaroni and Cheese

Reviewed: Dec. 19, 2005
This is the best "from scratch" macaroni and cheese I have ever tasted. It is very creamy and has a rich cheese flavor. I have made it several times and it is always gobbled up. I add only 1 tbsp of dijon, otherwise it has too much 'bite' for me.
