Sturdy Whipped Cream Frosting

Very good whipped cream frosting. I didn't have almond extract, so I just used extra vanilla. I did add a little more sugar and vanilla so I would have more of a whipped cream taste instead of cream cheese frosting. Overall very delicious.

Spanish Flan

Excellent recipe. My husband loves flan, so I make it frequently. I added the extra egg per many reviewers. I feel this was a mistake and won't be adding it the next time. The easiest way to caramelize your sugar is in the microwave. I'm surprised more people don't use this method. I use 1-cup sugar & 1/4-cup water. Pour into glass pie dish and stir. Microwave, at 2-minute increments. It will eventually caramelize -- just be patient. After the first 4 minutes or so, begin to watch it closely. You may have to stir, gently, with a wooden spoon once or twice to evenly distribute the sugar. My microwave did the job in 7 1/2 minutes. After cooling on the counter, I refrigerated overnight. Unmolded the next day. Beautiful results. Thanks for sharing!

Creamy Rice Pudding

Try it BEFORE knocking it. This is an EXCELLENT recipe! Produces a nice, creamy white rice pudding -- very similiar to a name brand product in the grocery store. It is not "eggy" at all. I followed the recipe as written, with the exception of adding the eggs. Be sure to temper your eggs before adding them to the hot rice mixture -- or you will end up with scrambled eggs in your pudding. Thanks for sharing Erica. If you are using leftover rice, be sure to watch your measurements! You'll need to double the amount of rice.

Classic Waffles

Excellent recipe. Few ingredients & simple to make. To keep the batter fluffy, wait until just before baking to mix the wet & dry ingredients. I made "Chicken & Waffles" -- a white gravy thick with chicken. My husband grew up in Amish Country, so I decided to surprise him with my own version.

Grilled Pineapple Slices

Excellent recipe. Would have been 5-star, except for the instructions. I didn't dredge the pineapple slices -- I applied the cinnamon-sugar mixture with a shaker instead. I also used regular milk, and sprinkled the almost finished slices with dessicated coconut. mmmmm The next time, I'm going to make pineapple-banana-mango kabobs using the same method. Thanks for sharing.

Pastry Cream

Followed directions exactly as written. Came out perfectly. Just like the eclair filling used in bakeries. Watch your milk mixture closely. As soon as it has lots of tiny bubbles, it's time to add it (SLOWLY)to the egg mixture. Also, Remove the cream from the heat as soon as it begins to boil, or it will get too thick as it cools.

Cream Puffs II

Although I got excellent results with the basics of this recipe, I decreased the rating due to the unnecessary complexity of the directions. I am only rating the pastry part of the recipe because I didn't make the whipped cream filling. I prefer a bakery cream type filling. Some people had problems with their puffs falling flat, or being filled with bits of uncooked dough. This is directly related to the amount of liquid used, and the cooking method. Most recipes are written for large sized eggs. If using extra-large eggs, you must decrease the eggs to 3, as I did. Also, you must remove the pastry mixture from the heat and allow to cool for 10 minutes before beating in the eggs, one at a time. The puffs should be cooked at 400 degrees for anywhere between 25-35 minutes. Watch them closely (without opening the door) and remove them when they are golden and dry. There is no need to change temperatures or take them out of the oven and place them back again. Cool them on a wire rack. I did not cut the tops off. I simply poked a straw through to make small holes. I then filled with cream using a pastry bag with a tip smaller than the hole I created. I filled them with the Pastry Cream recipe from this site. (I separated the filling into two bowls, and added about 1/2 jar of Nutella to one of the bowls.) The ending was quite nice. I made a huge baking sheet full of pastries. They were devoured in about 2 hours.

Confetti Pies

My mom makes a recipie similar to this that I love! I used 1/4 cup of lemon juice, no fruit at all, and just mixed ingredients by hand with a rubber spatula. I also added a few drops of yellow food coloring since there was no confetti in my pie. My recipie only is enough for one pie that chills in the freezer for a few hours. Love, love, love, have always just called it lemon pie.

Brooke's Best Bombshell Brownies

These were so delicious and perfectly fudgy. The only thing I changed was the sugar. I used 1 1/2 c. brown sugar and about 1/2 c. white sugar. Then I used the mini semisweet chips and just eyeballed the amount. I always set my timer for less, so I set it for 30 min and just added 4 min until I got the consistency I wanted. They are divine. I tried another recipe on the site with high ratings, but this one definitely is my favorite.

Luscious Lemon Snaps

This is a wonderful recipe, I wish i had read the reviews before I started. I ended up adding about a 1/4 cup of flour to get a batch of good full cookies, but well worth the time to tweek it. I love the flavor, I used 3 large wild lemons and the flavor was unbelievable.

Sweet Chocolate Bars

I'm giving this three stars because the pizza crust (ready-to-bake dough that is sold in the bakery at our grocery store)did not taste right with the toppings. If this would have been on a less salty bread-like crust it would have been very good. If anyone has other suggestions as to what kind of crust to use I'd definitely try this one again.

Gingerbread Waffles

These were delicious even though I was missing some ingredients. First, I substituted pure maple syrup for the molasses. Then I had to make my own allspice - equal parts cinnamon, nutmeg, cloves & ground black pepper. Finally, I didn't have buttermilk, so I put 1 Tbsp lemon juice in a measuring cup and added skim milk up to the 1 cup mark and waited 5 minutes and then added 3/4 c to recipe. I also added 2 Tbsp flax and 2 Tbsp wheat germ. Despite all of my substitutions, they were wonderful!

Mincemeat/Pumpkin Chiffon Pie

Ok...so I'd never had mincemeat-anything (apparently it's a Northern/British thing) or a chiffon pie before but this seemed like an interesting/fancy dish to bring to a dinner. I was nervous as everyone took their slices but it tasted great!! It was a big hit!
