Iced Pumpkin Cookies

I'm glad I went to buy the ground cloves for this recipe. It gives the cookies and little kick. The icing is great too and looks wonderful.

Chocolate Chip Pudding Cookies

Good, cake-like textured cookie with many different possibilities for variation. I used Pumpkin Spice pudding mix and added caramel bits & raisins. Perfect for Autumn. Tasted like little mini pumpkin cakes. Could have used a bit more spice though. Can always add some next time.Using a small cookie scoop, the recipe made approx. 6 1/2 dozen cookies. They're thicker than I expected - especially with using a full 1-cup butter. That's a lot of butter. It should have been a flatter cookie with that much butter. I think it may have something to do with the high temperature. Would like to try again, decreasing the oven temp to 350. A good cookie for folks who like their cookies soft.

Pumpkin Pie Spice I

WONDERFUL. I was going to buy pumpkin pie spice at the store yesterday. But it cost $5.49 for a tiny 1 oz. jar. I thought that was outrageously expensive. This mix was right on the money -- and used what I already had in the spice rack. Ingredients were the same as listed on the jar at the store. THANKS FOR SHARING!

Spaghetti Sauce Mix

Excellent and frugal recipe. My mom used to make spaghetti using the mix, and everyone loved it. I used the mix recipe, but with a twist. I browned grown beef, onion, green pepper, and fresh garlic. Stirred in 1/4-cup of the mix, 2 cans tomato paste & 4 cups water. Let it simmer while I cooked spaghetti. Turned out great -- and cheap too. My kind of recipe.

Chicken Pot Pie I

I was pleasantly surprised by this recipe. I have never made a "quickie" chicken pot pie in my life. I always cook mine from scratch. But I was looking for ways to use up some leftover chicken and a refrigerated pie crust purchased from the "reduced" section at the local grocery. I stumbled across this recipe. So, I thought "Why not?" This is one of those recipes that should be entitled "chicken pot pie your way." As with all recipes, I tweaked it a bit to make it my own. And this one turned out fabulously. After reading the reviews, here's what I came up with: Mixed soup with milk in a large bowl, per some reviewers. Added a generous splash of white wine, 1 chopped onion and 1 potato,cubed.Followed by the leftover chicken (cubed), and frozen mixed vegetables until the amounts looked right. Many people complained that the recipe was bland, so I seasoned the filling with poultry seasoning, salt & pepper. Spooned it into the bottom crust in a deep dish pie plate. Topped with the 2nd crust and cut 4 vents. Baked, covered with foil for about 30-35 minutes. Removed the foil and brushed the top with a beaten egg. Returned to the oven for another 15 to 20 minutes, or until it was a pretty golden brown. Even with the changes,the dish cost under $5. A great way to stretch my budget. Thanks for sharing.

Pineapple Cranberry Chicken

Made as directed the first time and enjoyed it. Later, I made it again, with a few tweaks. I prepared a box of instant stuffing mix and spread into greased 9x12-inch baking dish.Grilled the chicken, and arranged over stuffing. Then mixed 1/2-cup barbecue sauce,1/4-cup of the drained pineapple juice with the cranberry sauce and spooned over the chicken. Then, baked as directed. Turned out very nice. Very economical dish.

World's Best Peanut Butter Fudge

Very easy to make and nice texture, but a little sweet. I drizzles some semi-sweet chocolate over top and then cut, and that cut down on the sweetness from the peanutbutter mixture. U could also use dark chocolate.

Swiss Steak Italian Style

Excellent! I used a whole onion and 1 jar of garden vegetable pasta sauce since I didn't have the green peppers or celery. Also threw in some sherry since I didn't have quite enough red wine. Came out surprisingly tender and tasted delicious!

Blueberry Buckle

This recipe was delicious. The only things I changed were I didn't have shortening so I used butter, used brown sugar in the topping, ran out of flour so I used cake flour and I baked at 350 for 45 min. I will definitely make this again!

Mexican Layered Dip

A favorite for movie time or as a snack between meals. I use this sometimes as an appetizer before tacos or serve with the large Fritos for when there are a bunch of kids over. They really like it (-minus the black olives, lol).

Black Bean And Corn Salad II

This is a pretty good salad and sometimes I will add some chicken if I want meat with it. I personally like it without anything added better. Sometimes I chop the ingredients up small and serve with my tacos or as a dip too when we are in the mood for something different as a snack.

Cream Cheese Frosting II

No Fry Crab Rangoon

These taste very close to the ones available at a local buffet. I thought the onion was a bit overwhelming -- next time I'll cut back to maybe 1 or 2-teaspoons, finely minced. I made two batches -- one with crab, and one without. Either way they tasted good. You MUST squeeze out all the air and seal well, or the filling will leak out. I think if you stuck a pin in the middle of each one before baking, the filling wouldn't leak out. I sprayed with butter flavored cooking spray before baking. They would be awesome if deep fried.
