I am currently attending the University of West Florida, with a dual major in Exercise Science and Health Education/Community Health. I started cooking in the summer of 2005 to better meet my cravings of healthier food, and now feed the hungry mouths of all my college buddies, my roommate, and my boyfriend, secretly adding a healthier palate of nutritional food to their lifestyle. My boyfriend, who detests the word healthy, has yet to complain about my whole wheat bisquits, my lower fat lasagna (his favorite), and my sugar-free chocolate muffins. I guess eating healthy food doesn't have to be painful!

Perfect Baked Potato

Really delicious potato! Seems silly but I have gotten into the habit of nuking my potatoes and could not remember how long I needed to cook them in the oven. I microwaved for 5 min as another reveiwer suggested and baked for 45 min at 350. It was so delicious my husband ate the skin (he never does that)

Cinnamon Nut Coffee Cake

Yum! I made these as muffins and they were tastier than the ones at my local coffee house. I used pecans instead of walnut. Next time, if making as muffins, I would cover for a little so the nuts do not burn. I have to remove a few before serving

Margaritas on the Rocks

My husband couldnt believe I made such a tasty & refreshing 'rita! I have been trying out my own recipes and some I have found online and I will look no further!! I used Cuervo Silver Tequila & Cuervo Mix as well. The Silver definately makes it smooth. Warning...these really pack a punch!
