A Farewell to Basil Fettuccine

Peppermint Bark

This was spectacular! My husband couldn't stop munching on these yesterday. He's usually picky for ratings but he actually gave this one 5 stars, which actually says something! I used chocolate chips from our cupboard (so no cutting), and like 6 candy canes from our Christmas tree. One major substitution I made was due to improvisation since we could not find peppermint extract at the stores. I used corn syrup and put it in the saucepan on medium heat with the smallest crushed pieces and when it bubbled I took it off the heat and added it to the chocolate. It turned the syrup pink, but it did not change the color of the either chocolate whatsoever. I also just melted the chocolates on medium low heat, stirring constantly and watching carefully. If you do end up like me and have no extract, do the substitution beforehand because during the wait the chocolate was harder to manage. Overall though, spectacular recipe. This is probably going to become one of our Christmas staples from now on!

Potato and Cheese Frittata

Good recipe! I made it with the Ore-Ida hash brown and did not cook the onion with the potatoes. I carmelized the onion separately and added both later, so that I got a sweeter taste. I also whipped the eggs whites (as suggested by someone) and folded in the yolks. I got a great fluffy frittata that was a hit!

Only use 1/2 a cup of sugar, 3/4 cup of sugar will put you in a diabetic shock!! Other than that... This is yummmy!

Country Fried Steak and Milk Gravy

I was skeptical at first with so little ingredients but this is truly fantastic! I admit, I was weary with the pepper...it does sound like a lot so I just eyeballed it and used very little compared to what it said. My husband said its not enough so I might opt to do half next time (too many incidents with recipes putting too much pepper). Either way, this was delicious. I've done this twice now and I've got a few tips. 1. If you have really thin steaks like I did, skip the medium high heat and go for medium. I learned the hard way its better to go for less heat. You can always cook it more. 2. For the gravy, I tripled the recipe the 2nd time, and I had to reduce the heat because it wasn't quite done yet at 4 min but if I left it on a little more on medium I think it would have started to burn. If you watch your heat and pepper it up to your taste you should have perfect results everytime.

Corn Dogs

Great recipe! Tried it today and it was perfect! I dried the hot dogs with paper towel while the batter was in the freezer chilling (it only took a few minutes). It stuck to the dogs without any problems and it stayed on perfectly during frying (I didn't coat them in flour or corn starch like other reviewers suggested). The corn dogs looked and tasted super yummy. My family gobbled the whole batch up within minutes. Thank you for posting this recipe!

Grandma's Slow Cooker Vegetarian Chili

Made this a few times. Very good. Seems to have just a little too many dried herbs in the composition(for our taste) but very good. I'll probably cut the dried herb proportions down to 75% each of what's listed next time to try out. But a really good easy recipe to use what's in your pantry! Thanks!

The Best Rolled Sugar Cookies

A really good basic recipe. I've made 4 batches of it so far this holiday season. Only comment: flavor seemed bland when I made it as written so I altered it to use 1/2 vanilla and 1/2 almond extract instead. Delicious! Will be hanging on to this one.

Seven Layer Taco Dip

I made this for a party and had to pull people out of the kitchen away from it to join activities in the other room a few times! Then finally to bring it in with us. :) Makes a ton but definitely the best layered taco dip all of us commented we've had to date. Thanks for sharing!

Taco Pasta Salad

Very good and hearty. I like the composition of these 2 great salads bc the pasta gives it such substance and taste and doesn't wilt like a traditional taco salad after it sits after awhile (then seemingly ruined / perished). Good stuff!
