Miami, Florida

Miami, Florida, has the second largest Cuban population of any city in the world, behind only Havana. It’s not surprising, then, that meals in Miami should have a Cuban accent. In fact, South Florida and Cuba share a common history: both lands were at one time claimed by Spain. Their close geographic proximity, the rush of Cuban immigrants into South Florida, and the wealth of foods indigenous to both places have eased the adaptation and evolution of Cuban cuisine in and around Miami. In South Beach, where clothing is optional (or often so minimal as to seem that way), the hip and happening are seeing and being seen, basking in both the Miami sunshine and the glow of their own fabulousness amidst trendy bars and spendy restaurants in a beautiful setting dominated by soft pastel Art Deco architecture -- much of the district is listed on the National Register of Historic Places.

Italian Herb Bread I

What a great treat! This is a simply robust bread packed with flavor! I modified just a couple of ingredients. I added rosemary, substituted parmesan, & substituted all-purpose flour. I made my in two 9x5 loaf pan since this bread is more of a hearty dipping bread I would shape it free-form into a loaf or even a a delicious round bread! Great to freeze and give as a hostess gift wrapped in a linen napkin with a bottle of wine!

Honey Chicken Stir-Fry

Perfect for a busy night dinner. I used orange blossom honey and added an extra TBSP and it was a little too sweet. I believe clover honey is best suited for this dish.

Suki's Spinach and Feta Pasta

This was very good. I used thin spaghetti. Added a squeeze of lemon juice and a little basil. Agree with the tip to use high quality feta. No "sauce" needed
