Chicken Enchiladas I

Flavor of the filing is good if you take the advice of others and substitute some of the ingredients with salsa and enchilada sauce. However, the flour tortillas turned to mush which is not very appetizing in my opinion. It may be a lot better with corn tortillas.

Famous Butter Chicken

Mediocre recipe. The chicken was tender but it did not have much taste besides that of the butter and buttery crackers. Not a recipe that either my husband or I really wish to keep for later.

Pizza On The Grill I

First off, I only used the crust recipe, not the rest of it. This recipe makes GREAT grilled pizza dough. I used the Easy Pizza Sauce III from this site and topped to everyone's personal preference. Very good!! I will definitely be keeping this crust recipe.

Chinese Noodle Chicken

If I ever make this again I will cook the noodles before I add them to the pot with everything else. I had a terrible time getting the noodles to cook by following the recipe and I ended up adding a lot of different liquids which probably completely changed the intended flavor and it ended up horrible.

Fresh Tomato Salsa

Very good salsa. I tried it with 2 serrano peppers and not too hot, may want to try with a jalapeno next time. Make sure to chop the cilantro and green onion really small. Does not look the best when making it in the blender but it tastes really good and makes a lot.

Garlic Spaghetti II

I don't care for the recipe as written, mostly because I don't care for oregano all that well. I have altered the recipe to meet my tastes a little better - left out the oregano, flavored with salt, pepper, added more minced garlic and diced up some roma tomatoes which I threw into the sauce.

To Die For Blueberry Muffins

I wanted to make muffins for my husband's family when they arrive next weekend so I tried making these today. I only had blackberries in the house so I used those instead of blueberries. I also took people's suggestions and used brown sugar instead of white sugar and I made sure to minimally mix the ingredients. The muffins were very good and fluffy; although, I won't use blackberries again because they are a little too big and juicy for muffins in my opinion. I think I will make a batch with blueberries and another with strawberries next weekend. FYI I chopped up strawberries and made strawberry muffins and they turned out great.

Gulf Coast White Rice Pilaf

I made it without the black beans and I was a little short with the chicken broth so I added water until I got the amount of broth needed. It is a good alternative to white rice. It has a mild flavor.

Frozen Strawberry Lemonade

I love this recipe! I am two months pregnant and the only thing that sounds good is Panera's frozen lemonade. This is an excellent homemade alternative. I used frozen strawberries. Definite keeper because it makes a great summer drink.

Joey's Peanut Butter Cookies

Absolutely delicious and I wouldn't change a thing! I made these for my coffee shop customers and they all agreed that these are the best peanut butter cookies they've ever had. These cookies have a more intense peanut butter flavor and they turn out soft and chewy. I do recommend that you not leave them in the oven too long for fear that they haven't finished baking. I left them in for the max amount of recommended time and they turned out perfect. They didn't look like they were done, but I followed the instructions and was pleasantly surprised.

Taco Pizza

Very good pizza! I must admit that I did use another pizza crust - Jay's Signature Pizza Crust, a recipe from this site, because I only wanted to make one pizza since it is only my husband and I. I cut the cayenne pepper in half in fear that it may be too much spice for us. Once I rolled out the dough, I put some olive oil and garlic powder on it and pre-baked it for 5 minutes. I topped the pizza with lettuce, tomato and crushed Doritos after it was done baking.

Gourmet Chicken Pizza

I made this on a homemade pizza crust recipe I have been using for a while now, from this site. I thought the ranch dress was a too strong as a pizza sauce, but my husband loved it. I'll keep the recipe for now until I find something we can agree on.
