I am the Head Chef/Kitchen Manager for a very busy breakfast/lunch cafe in Tampa, Fl. I am a single dad, of one precious 11 year old girl, and love my current work hours. They allow for me to enjoy my daughter and be a good dad. I am the quintessential red neck I own big mud trucks, four wheelers, and could never live in a deed restricted community. I enjoy hunting but not fishing. Most importantly I have not found anything that I cannot cook very well!

Chicken Curry I

Two things!!! 1.you will need to cook this dish a long time and 2. use chicken stock to cook in. I used a whole cut up chicken and was nervous about the amount of water I needed to cover the pieces. I thought that the taste at that point was not very strong so I added chicken boullion cubes to the water. Later...much later about 2 hours I was pleased to see that it had boiled down enough to be called a sauce and not soup...I added a handful of raisens and a chopped carrot and pepper to the sauce. The end result was very good!

Beth's Spicy Oatmeal Raisin Cookies

this was absolutely the best. I did add 1 cup chocolate chips and 1/2 tsp of grnd nutmeg. I found the cookie to be so great, but do not over cook!!!!
