Basil Chicken over Angel Hair

Wonderful recipe! I made this for my in laws after my father in law suffered a stroke and needed to change his eating habits. Everyone loved it. I changed the diced tomatoes to canned tomatoes preseasoned w/ garlic, basil, and oregano, however. Still a wonderful dish! A++!

Oven Fried Party Drummettes

This was so different and very good. However, my family were not particularly crazy about the Hidden Valley dressing, so the second time I made it, I used Zesty Italian (packaged) and that was great. I left the wings in for a bit longer for extra crispy.

Hot Fudge Ice Cream Bar Dessert

Sinfully good! I also switched the order of the whipped topping and the chocolate/peanut butter mixture and I also used caramel syrup and pecans. It came out much like turtle desserts, but with the yummy addition of ice cream. I would do it again in a heartbeat!

Grandma's Pork Chops in Mushroom Gravy

Recipe came out great, thanks to my meat thermometer. As mentioned earlier, the cook time for this is too long. I also used flour to thicken instead of corn starch, as I don't like clear gravy. We liked it, and it is now in the rotation.

No Bake Cookies III

I made this recipe twice, the first time I followed the directions exactly and they turned out fine. But I like more peanut butter so the second time I used 1 cup of peanut butter instead of 1/2 and liked it better. The batter was thicker and made it a little easier to work with and they hardened up more quickly. Either way the recipe is great.

Tonkatsu - Asian-style Pork Chop

Absolutely wonderful! A nice change from your typical "shake and bake" style pork. We served it with teryaki dipping sauce and steamed cauliflower, snap peas, and carrots. Will definitely make again!

Easy Key Lime Pie I

Graham Cracker Crust I

This crust tasted very good and I liked the amount of cinnamon and sugar. When I made it as directed though there were too many Graham cracker crumbs and not enough butter. I increased the butter by 2 tbsp and was able to thoroughly incorporate the crumbs but I had way too much for the 8" pie plate. I will use this recipe again and adjust the amount of ingredients.

If you're looking for something rich and chocolatey then this fits the bill. I thought that the texture was almost like a cookie- it was definitely different. This won't be my "go to" recipe but I usually have the ingredients on hand so it would do in a pinch.

Pecan-Oatmeal Pancakes

These pancakes were fabulous! My husband and girls loved them. I reduced the oats to 3/4 cup and added 3/4 cup of ground flaxseed meal and was surprised at how good they were. This will be my "go to" recipe for healthier pancakes.

Grandma's Sugar Cookies

The flavor of these cookies is excellent but I was disappointed with the fact that they spread out so much on the pan. Perhaps the dough for my first panful was too cold; they all ran into one another. Then I tried baking them on parchment paper...a big improvement but my hearts still did not keep their shape very well.

Ruby Red Layered Salad

This was wonderful, a change from the usual cranberry salad. I too added a few pecans in the final layer and was also surprised that the sour cream had more of a whipped cream sensation when layered between these gelatin layers. My family and friends ate the leftovers as a dessert snack.

Dutch Apple Pie with Oatmeal Streusel

I wanted to make the apple pie recipe on the Splenda bag but didn't have two crusts. I used that recipe for the Splenda pie and substituted top crust with this oatmeal topping using 1/4 c. of Splenda brown sugar blend instead of regular brown sugar. It was delicious!
