Shrimp Scampi Bake

Reviewed: Nov. 13, 2008
This is "the Best". What an easy way to have a wonderful meal. I recalculated this to 3 servings, which uses 1 lb. of shrimp and is plenty for just the two of us. Wouldn't hesitate to fix this for guests. We love it with grilled asparagus and a salad.

Hawaii Chicken

Reviewed: Oct. 28, 2008
I follwed the recipe exactly except added a tiny bit of ginger, and used chicken breasts. At first it was okay. Nice and sweet, but had a weird texture. The more I ate of it, the worse I felt. Then after eating almost half a plate of this, I couldn't eat it anymore. My husband asked me to please don't make this dish again.

Very tasty but when in the crock pot,but you need to add more liquids. This is a very easy throw togehter meal for a weeknight!great for those who like pepper steak. Tip when using stewed tomatoes, use one with the Italian seasonings. It adds more flavor to the dish.

Marsala Whipped Sweet Potatoes

Reviewed: Oct. 26, 2008
The first time I tried this recipe my husband accidently put grnd coriander instead of nutmeg. So I added extra nutneg, and extra cinnamon to cover the mistake. The second time I made this, I followed the recipe EXACTLY. BUt it had a very balnd taste, so again I added extra cinnamon, and nutmeg. That did not help, so I added brown sugar and allspice. For that reason alone I am giving it two stars instead of one. If you attempt at this mrecipe, add extra cinnamon, and extra nutmeg to improve the taste. If that doesn't help, try about a 2 Tsp of brown sugar.

Blueberry Streusel Muffins

Reviewed: Oct. 18, 2008
I've made this recipe a couple of times and it's wonderful. The batter is rich and creamy and the muffins turn out perfectly round and beautiful. The streusel is really unnecessary but if you use it I think you should add oatmeal or something to make it more substantial. I also tried a 50/50 mix of whole wheat and white flour and they definitely didn't have the same loft as before. They still tasted very good but they were pretty flat.

Pumpkin Pie Flan

Reviewed: Oct. 18, 2008
This is a great recipe and it turned out perfectly. My mother-in-law who is Cuban raved about this and asked me to make it the next time she visits. I think it tasted like pumpkin pie without a crust and the texture was different than original flan because of the pumpkin. I prefer the creaminess of flan so I gave this recipe 4 stars.

Pumpkin Pancakes

Reviewed: Oct. 18, 2008
Wow! These pancakes are seriously yummy. I made them with a 50/50 blend of white flour and wheat flour and they were delicious. I also used 1/3 the amount of brown sugar for the cider syrup and it turned out great. I think that it would be too sweet with the full amount.

Oatmeal Waffles

Reviewed: Oct. 16, 2008
I am giving this recipe two stars because it was very bland. I admit I did substitue buttermilk for vanilla soy milk, and applesauce for butter, but it turned out very bland!! It needed a little something. (i did add a tsp of vanilla, and a tsp of cinnamon) Plus the mix was too watery. I had to thicken it with more flour. I think I'll stick with the oatmeal and wheat flour pancakes,(similar recipe)also posted on this sight.

Bran Muffins III

Reviewed: Oct. 11, 2008
This is an awesome recipe!!!! I did take one other's reviewer's suggestion, and used applesauce instead of butter, vanilla soy milk, cinnamon, nutmeg and cloves, When I ground up the allbran cereal in the blender, I added the soy milk with it so I didn't burn the motor out on my blender. I added a little extra cinnamon(about an extra tsp) and a little extra brown sugar (about 1 Tbs). Then to top it off I added a tiny bit of unsweetened cocoa. Dried cranberies are a nice addition.

Oatmeal and Wheat Flour Blueberry Pancakes

Reviewed: Oct. 8, 2008
My husband and I give this recipe five stars even though we made very minor adjustments. We didn't have palin blueberries, so we added frozen mixed berries. Extra cinnamon because we like cinnamon alot!!!! We also used skim milk in place of soy milk because we didn't have any soy milk on hand. throw in a few tsp of ground flax seed, and you've got a healthy breakfast. Also, we used sugar free syrup because of our diet.

Spicy Turkey Burgers

Reviewed: Sep. 28, 2008
This was a wonderful recipe. The burgers were healthy, juicy, and best of all yummy!! My only variatios were that I could not find any Chilie peppers, so I substitued it for a jelpeno pepper, and I only put in 1/2 a small red onion, which I chopped very fine. This turkey burger was so good, I didn't need to add anyhting else but a tomato on top.

Meatloaf with Fried Onions and Ranch Seasoning

We've finally found a meatloaf recipe we adore! The only change I made it making a "glaze" for the top: 1/4C ketchup, 1/8C BBQ sauce, and 2tbsp brown sugar. :)

Cake Mixes from Scratch and Variations

Reviewed: Jun. 15, 2008
This cake is so very delicious! If you're expecting the same loft that you get from a boxed cake then you'll be disappointed as this cake is more dense. But I prefer it for it's simple ingredients (no fake stuff in this one) and wonderful taste. Plus it's much easier to decorate a cake that's more dense- I made it into a bunny cake for Easter. I did substitute butter for the shortening because I never have that in the house and it turned out just fine.

Baked Flan

Reviewed: Jun. 15, 2008
My husband is half Cuban and said that as far as taste and texture goes, this is as good as he remembers from his Grandfather or Abuela. I, too, really liked the taste and texture. It was very smooth and creamy and was the best flan I've had by far. The issue that I had though was with the directions being incomplete. The recipe didn't indicate at what point or how you got the flan onto another dish or if it should be cooled first. And when I poured the hot sugar into a cold dish it quickly became hard and stuck in the bottom of the pan. So I would follow the advice of another reviewer and carmelize the sugar in the pan you plan to use or make sure you're swirling the dish you're baking it in while you're pouring the sugar. After you cook it let it cool completely before you transfer it to a serving plate. Which you can do by putting your serving plate on top of the cooking dish and then turn it over. Maybe those instructions aren't there because it is assumed that everyone knows that but I'm sure there are some that don't. Having said that, the instructions for carmelizing the sugar were very helpful and I didn't have a bit of problem with that. I would give this recipe 5 stars for taste and 3 stars for incomplete instructions.

Dad's Pan-Fried Green Beans

Reviewed: Jun. 1, 2008
I make something very similar to this without the vinegar. I love the sesame oil with the green beans, YUM. I always add some type of nuts, usually sunflower seeds. Also good with some french fried onions on top as a garnish.
