Super-Delicious Zuppa Toscana

I make this often. I always double the recipe. I also use 1 pound of spicy italian sausage and 1 pound of sweet italian sausage. This is a perfect copy-cat recipe!

Honey Roasted Red Potatoes

08/01/2009~These were good, just good. I followed the recipe exactly and the next time I make them I will double up on the honey and mustard. I may even use Dijon mustard or a honey Dijon mustard instead of the mustard powder. They were ever so slightly sweet. I WILL make these again. Thanks for the recipe.

Sweet, Sticky and Spicy Chicken

Made this for dinner on 07/26/2009. Everyone loved it, which includes my 11 yr old, 7 yr old, and DH. Used powdered ginger as that was all I had. Cannot wait to try this with fresh ginger. Went great with broccoli and potatoes!

Yellow Squash Casserole

This was excellent made despite a lot of dishes..they all clean up with a quick rinse. Perhaps some garlic next time. It got done before my entree so I just turned off the oven and left it in there and it got a nice golden crust on top--YUM! 4 cups of squash was four medium squash--to my suprise. I don't think there is any way that this would feed 10--three of us devoured over half of it.

Slow Cooker Chicken and Dumplings

We really enjoyed this and it was even better the second and third time around. Please do pay attention to the caution by others that the dumplings may look like an icky mess, but fear not, they turn out great. I added a second can of soup because it looked like the liquid was going to be too thin, but then the extra soup made it too think and I had to thin it down on subsequent uses. I left my chicken breasts whole, but I think the next time I will pull them out toward the end and cut into large pieces. I liked using frozen meat which I buy in quantity from my local warehouse market. This was yummy!!

Simple Whole Wheat Bread

This is the best whole wheat bread I have eaten- better than store bought. I substituted sugar for the honey and ended up using the additional 4 cups whole wheat flour. I allowed an additional 1/2 hour for the rise and was able to get 3 loaves so I shared it with family and friends. It is now our weekly ritual, even my 2 year old gets into the act of kneading!! Thanks for sharing this recipe with us.

Oven Fried Party Drummettes

This was so different and very good. However, my family were not particularly crazy about the Hidden Valley dressing, so the second time I made it, I used Zesty Italian (packaged) and that was great. I left the wings in for a bit longer for extra crispy.

Chocolate Upside-Down Cake

I have been looking for a cake recipe similar to this that my mother always made for my birthday. This was a suggested recipe and I made it without coconut and chocolate chips, first in a 9 x 13 pan, then in a bundt pan. It was wonderful. I prefer the bundt pan method and the only change I need to make is maybe just a few less marshmallows and water, as this puffed so well it overflowed into the middle hole and onto my oven floor. WONDERFUL flavor, very moist. Kept in refrigerator (covered) very well.

Seared Sea Scallops

This was excellent. At suggestion of others I deglazed the pan with some white wine, butter & lemon juice. Used a little too much lemon :( ..so had to add a tablespoon of sugar to offset the acid but it was still delicious.

Baked Corn Casserole

I just made this yesterday May 24, 2009, for a BBQ. There was none left and EVERYONE wanted the recipe. I skipped cooking the onion and just added dry minced onion. I will be making this again and again. It went very well with BBQ chicken and ribs! I highly recommend doubling the reicpe, which is what I did. Thanks for a great recipe!

OK, I just made this winging it...brushed mayo on the fish, and dredged it in Italian bread crumbs mixed with some parmesan and garlic salt. Filets were thick so it took 30 min at 410...Excellent!

Spinach Lentil Soup

I just dumped all the ingredients in the crock pot and let it cook all day and it was delicious. I used opposite stock/water measurements (made broth from chicken base mix) and I added a spoonful of garlic from the jar. Watch the red pepper flakes, it was spicy!

Creamy Black Bean Dip

I immediately jumped on this recipe for a Sunday afternoon snack. We like balsamic vinegar so I doubled it and next time will eliminate the cider vinegar...Used garlic powder b/c I didn't have onion and will probably add more next time. Very good! (p.s. double this ...it will go fast!)

Cut-Out Cookies

Followed advice of others and creamed sugar and shortening first, added dry later. Used exact amounts of flour. Rolled like a dream and tasted like the bakery cookies we get at Publix. Glaze was good, too, and it dried well.
