Grandmother's Buttermilk Cornbread

Excellent cornbread recipe! The best part of this recipe is that the cornbread is sweet and moist (even after it cools). I made it exactly as stated but doubled the recipe (used two large catering bake pans). Put both in the oven and only cooked it for 40 minutes max. Keep an eye on it. Don't want the sides to burn. I used an electric beater to blend it well.

Oyster and Cornbread Dressing

This was absolutely fantastic! I never liked this dish (even my grandmother's Boston version) growing up. However, I wanted to bring something different to our neighbors' Thanksgiving and this was perfect. It seems like a lot of oysters when making the dish but the flavor is actually subtle. I used one of those big baking catering pans and it was perfect for a crowd of 30+. I have never ever seen an entire oyster stuffing gone. Everyone raved about it. Make sure you leave a sign out that it's oyster stuffing since it looks like cornbread stuffing. Avoid shellfish allergies. I made this exactly as it was stated except in the directions it mentions parsley. I didn't realize that was the celery until after I sauteed the onions. It didn't matter that I threw the chopped celery in with the rest of the ingredients in the end. Also, the hint on just using one pot worked out really well. I melted the butter, sauteed the onions in the butter. Pulled it off the stove, added the rest of the ingredients in the pot and transferred to a disposable catering pan baking dish. I baked it for 45-50 minutes max. This will become a staple for now on.

Party-Size Greek Couscous Salad

No more pasta salad for me. After trying this recipe, I will start making this instead!! Wow was this ever good. I did add sliced pepperoncini peppers to this, for a little zip, other than that followed recipe to a T...Very good!!!

Peanut Butter Ice Cream Pie I

I used chocolate grahams, because that's what I had on hand...Oh my gosh, is this ever good. I used 9 "whole" graham crackers, it does not specify in the recipe what 9 means, 9 little rectangles or the entire cracker. This is easy and very tasty. I drissled chocolate syrup over each slice. Try this, whomever eats this will be impressed and want another piece!! By the way, I did not think this was too peanutty. I also used french vanilla ice cream.

Isaiah's Pretzel Fried Chicken

I thought this was very good. Two of my kids really enjoyed this. I cut them into strips and fried in my fryer. YUMMY!! Very good with honey mustard dipping sauce recipe on this site. This weekend I'm making these into bites and serving them as an appetizer for a BBQ. Will kepp yo updated. I also want to try and bake these.

Habanero Salsa

I've been making this for years. The only thing I do different is add a few pickled jalepenos to the mix and if I can't find whole stewed tomatoes in tomatoe sauce, I drain of the excess liquid in a collander before mixing the other ingredients with the tomatoes. try this, you can't go wrong. wonderful and fresh tasting!!

Pizza Dough I

Wow, I basically love the convenience of this recipe. I'm vegan, too, so I'm really glad that I can actually make my own pizza now! I'm really grateful for the versatility of this pizza dough, too. Most of the time I make actual pizza, by adding tomato sauce and veggies and spices, but sometimes I add a little melted butter, sugar, and cinnamon as a treat. ;-)

Pumpkin Bread III

I liked this bread a lot! I made it in muffin form. :) I did notice, however, that it had a slightly eggy taste. As if I had put some fried eggs into it.... I did change the recipe jusssst a tad, though. I used walnut oil instead of vegetable oil, and I also used pumpkin pie spice instead of all the spices. My roommates especially liked this.

Traditional Salisbury Steak

This is super good. great meal for the whole family. Just make sure you use good quality ground beef. ie; ground sirloin. Makes a big difference in the overall taste. I know, I've made this twice. Once with high quality the other with not so high quality, (thats what I had in the freezer). Do yourself a favor, buy the more expensive ground beef.

Pumpkin Bread IV

I cut the the recipe by 1/3 (scaled it to 24 servings) and used 1/2 cup of oil (instead of 1 cup)and 3 cups of pumpkin instead of 2. I baked it 55 minutes and it was perfectly baked. I used a silicone loaf pan and it fell right out of the pan--no sticking--I use silicone bakeware exclusively by the way. Anyway, the pumpkin bread was very good, we all loved it. It wasn't as sweet as I thought it would be, but that's OK, it was still delicious and I will make this over and over again. Next time I am going to add an extra teaspoon of Cinnamon and a tsp of ginger. I'll let you know how it comes out!
