Apple Crisp II

Tasty Tuna Burgers

These are a wonderful alternative to regular old tuna! I didn't have on hand lots of the ingredients, but the burgers still tasted great. Putting them in the fridge for 30 minutes was a perfect idea; they really were easy to handle! I plan to make these often. I actually used them in a salad-- I cut the burgers up in pieces and tossed them in with the lettuce. It was very good!

Pecan Sandies

These are absolutely the easiest to make and best tasting cookie. I make these several times a year and always to rave reviews. The only change I have ever made to this recipe is to toast the whole pecans before chopping them. Toasting the pecans makes these irresistable!!!

Apple Turnovers

Amazing! I didn't have access to the amounts in this recipe when I was making, but I remembered the directions so I used the following: I left out the soaking part, used 3 small granny smith apples, 2 tbsp butter, 1/2 cup packed brown sugar, 1/4 tsp cinnamon, 1 tbsp water, 1 tbsp cornstarch. Used the pepperidge farms dough with an egg wash and turbinado sugar- absolutely mouthwatering. We only had 1/2 of a turnover left over after everybody dug into them warm, but with that 1/2, I found out that it's also great cold.

Honey-Garlic Glazed Meatballs

We loved these. I actually made a mistake- I only used 1 lb of ground beef and didn't cut in half the other ingredients. It didn't matter- the meatballs were delicious and there were plenty for the 2 of us. (we had leftovers the next night) I also made a lot less of the sauce because I didn't want to smother the meatballs in it; I just wanted to have it for dipping or lightly flavoring things. The small amount I made worked out wonderfully. We ate the meatballs on top of pasta. Can't wait to make again!

World's Best Lasagna

The only changes I made were to cut the salt and sugar in half. I usually don't put sugar in my pasta sauce, but I wanted to follow as close as possible. I simmered the meat sauce in the crock pot for a couple of hours the night before I actually served it. I used the no-boil noodles and they were fine without pre-soaking. The amount of ricotta was perfect, not overwhelming as some lasagna tends to be. The day we ate it I thought it was good, but not sure if it was worth the trouble and expense. Two days later this recipe had earned it's 5 stars. The flavor was incredible! I strongly suggest preparing this a day or two in advance and allowing the cheese flavor to really sink into the meat and noodles. Fortunatley I doubled the meat sauce so I'm going to go ahead and prepare another pan to freeze for later use.

Beef Fried Rice

Great simple recipe, I definitely plan to make this many times. The reason I gave it only 4 stars is because the recipe does *not* stress that it's VERY important to use room-temperature rice, NOT hot, just-cooked rice. If you use hot rice, the dish will be very mushy. The first time I made this, I followed the recipe as it was written and was disappointed in the mushiness. But I gave it another try, and made the rice the night before, and then heated it just to room temperature before making this recipe. It came out much better and was delicious.

Caramel Apple Dip

OMG this was delicious!! SO simple to make! I used an 11 ounce bag of caramel bits since they are so much easier to melt. Make sure you soften the cream cheese first. I chilled the dip in the fridge for a little while before we ate it and was soooo good!

Buttermilk Pancakes II

Golden Pumpkin Rolls

My mom had a similar recipe, but lost it a long time ago. These were so good I am going to make them again!!!! I did not have any ginger, or ground cloves, so I used pumpkin pie spice instead. They were a big hit.

Pumpkin Cream Cheese Muffins

These came out perfectly. I did add a little bit (about 1/2 tsp) of pumpkin pie spice. I filled the muffin cup up about 1/3 of the way, then put a dolip of the cream cheese mixture, and then a little more batter and they were perfect. I will absolutly make these again!

Slider-Style Mini Burgers

Loved these! They tasted a lot like Krystal burgers, which have always been a guilty pleasure for me. I used 1 lb ground turkey with 12 Hawaiian rolls, and there was too much meat mixture to fit in the rolls, so I'd rec having extras. Everything else was great!

I had to use apple cider vinegar beacause it was all I had on hand. Needless to say, my cake didn't rise. The batter tasted good though. So I know it could have been a great cake.

Baked Potato Soup V

Sooo goood! This was the perfect soup for a cold evening. I didn't have as much milk so I substituted some home made cream of chicken I had and I think it gave it a very nice flavor. I also added a pinch of rosemary. Delicious!!

Butter Flaky Pie Crust

Cream of Chicken Soup From Scratch

Hi to anyone considering this recipe. I just wanted to let you all know this recipe is for CONDENSED cream of chicken. It will be just as thick as the canned stuff. Also, if you use pan drippings from a roast chicken it tastes worlds better!!

Pumpkin Cream Cheese Muffins

These were certainly delicious, but I had to jazz it up a little to my own tastes. Like other reviewers have noted, the "filling" mixture as written is soupy and impossible to work with; mine was also a very unappetizing shade of brown from all of the added vanilla. I added 4 ounces (half a package) extra of cream cheese, and then whisked it together; there were a few lumps, but the filling didn't run all over the place. I didn't have any pecans, so I had to improvise: the only nuts I had on hand were macadamia nuts, and truthfully, I think they were more awesome! Great compliment to the pumpkin. As for the pumpkin base itself, I used an entire 16 ounce can of pumpkin, since I didn't want to stick the remaining 1/3 cup in a tupperware container. The pumpkin was spot on, but I doubled the cinnamon and added ginger, allspice and nutmeg to make it spicier, and it was great. With these extras, my second batch of of muffins were outstanding, but without them (more cream cheese, more pumpkin, more spices), it was slightly bland. A great base recipe.

Italian Sausage Fried Rice
