I LOVE this recipe. I made these for my family and everyone LOVED them. I used frozen blueberries, and fresh lemon zest and 1 tablespoon of fresh Lemon Juice. They came out great.

I left out the rasins and replaced them with chopped walnuts, and the cakes turned out beautifully. These were the first scratch cakes I have ever made, and they were the bomb.

Coquito

Reviewed: Nov. 25, 2006
I made this Coquito again this year. I'm Puerto Rican and it is true to it's name. Last year I didn't broil this but there is a reason to broil this recipe. Since it has eggs it is the safest way to make. I added 1/4 tsp of vanilla and more rum to my taste and it still came out delicious. This is a great recipe. Thank you for sharing. Jan

Individual Baked Eggs

Reviewed: Sep. 28, 2006
I kind of cheat on this one. I buy the bacon that is already cooked, that way I only have to clean the muffin tin. I also scramble the eggs, and add grated cheese to them so it goes through all of the egg. these are great, the kids love them, the grown ups love them, and when I make them for guests I look Like a pro. thanks for the idea.

Tater Tot Casserole I

Reviewed: Sep. 6, 2006
I made this with 4 eggs and 3 cups of cheese (all I had) per other suggestions. My wife and I both liked it, but it was a tad greasy. In the future I will use the reduced fat cheese to reduce the greasyness as well as drain the sausage thouroughly under some hot water. But over all pretty good!

Different Chicken Cordon Bleu

Reviewed: Aug. 25, 2006
Very tasty! I have made a very simular recipe many times, minus the ham and sour cream, so I knew it would be good, but this exceded my expectations. I do believe I will add some butter/wine mixture to the top as I would rather have the topping moist than crunchy. I found previous reviewers comments about the strong wine flavor odd, as I could barely detect the flavor of the wine in the dish. Could it be possible they were using cooking wine or a bottle that had been open for a while? Cooking wine is nasty and should pretty much never be used, while wine that has been open more than a few days (even in the refrigerator) will start turning to vinegar, which would give a sour taste. Just a thought! I used fresh a bottle of cheepo chardonnay and it was barely there. Next time I think I will try some cheepo Riesling.

Bacon Cheddar Deviled Eggs

Reviewed: Apr. 14, 2006
when I make these I up the bacon to 6 slices (I usually use pre-cooked bacon because it is easier),I leave out the mustard and use sharp cheddar cheese instead so it still has a zing to it. I am requested to bring these to every party I go to.

This is so good, easy, and tasty. I made one batch with 1% milk, and fat free sugar free pudding, and fat free cool whip. You could not even tell it was diet. I made the other batch regular. I will only use this from now on.
