Tomato Chicken Parmesan

Baby Blue Punch

Sweet Sweet Potato Casserole

I rated this 5 star because I'm sure it would taste great as written. It gave me a great starting point. Here are some changes I made to make it healthier for us: 1/4 C. of Maple Syrup in place of brown sugar; just enough f/f milk to make it the right consistency; used coconut flour instead of all-purpose; coconut oil in place of butter; and added cinnamon and vanilla (or grand marnier) to taste. For the topping: I added coconut oil to the pecans and unsweetened coconut and spread this on top. I was even surprised myself of how delicious this turned out. This recipe gave me something to work with...thanks so much for submitting this!

Chicken with Lemon-Caper Sauce

Even though it was too tart for our taste, I went ahead and rated it 5 stars because it is basically a great recipe. Next time though I will start out with half the amount of lemon juice and make up the difference with either water or chicken broth and then add more lemon juice if needed.

Mushroom Oven Omelet

Exceptionally delicious!! Admittedly, I didn't measure some stuff so mine probably had a little more bacon, a little less cheese, but the base of this recipe is fabulous! I can foresee experimenting with different meats and veggies in the future.

My Crab Cakes

My 16 year old is a crab cake fanatic, so I knew that this recipe was a winner when he gave them a big thumbs up. Taste just like restaurant cakes and so much easier than I thought they'd be. Delicious!

Grandma's Slow Cooker Vegetarian Chili

Couldn't find black bean soup so I used a can of black beans in seasoned sauce (more like seasoned water). Everything turned out well even the two Tbs. of chili powder and I don't like chili powder. I served this with a pan of cornbread on the side.

Peanut Butter Cup Cookies

I had a lot of trouble with this which may be my fault. I didn't have enough muffins holes in my mini muffin tin so I just put them on parchment like regular cookies. I didn't adjust the time (if I needed to) and the bottoms turned charred black. I had to throw them out, I was sad.

Cream of Fresh Asparagus Soup II

Definitely "5-Star"! I made this according to recipe using organice free range chicken broth, sea salt and fat free milk. Topped it with a dollop of sour cream, sprinkling of 6-Cheese blend, asparagus tips and freshly ground pepper. Served it with blue corn tortilla chips. Looking forward to leftovers! Pepperoncini Beef

This is my first time to rate/review any recipe, but I just had to add my "5-Star" rating to this one! It has become an old standby for me. Sometimes I add sliced onions and au jus to the liquid as has been suggested by other viewers. Any leftovers I freeze in the liquid and it's wonderful to have on hand. This recipe has lots of possibilities as I often use it as a base for casseroles using noodles, spinach, mushrooms, etc. Thanks Joyce for a real winner!!!

Asian Coconut Rice

I suppose there's so many different reviews on this recipe because a majority of people don't know what the proper additions are to coconut rice. If you think you'll get the answer in this review, you are terribly mistaken. I find how you make the coconut rice itself will dictate what should be served with it. If you want to omit the salt and rice I'd suggest eating it with chicken or another meat. If you'd like to try this as a dessert then keep the sugar (maybe even add more to your liking) and top it off with sliced almonds, ripe mangos, kiwis, mandarin oranges and pineapple. I like making almost a casserole with these latter ingredients and serving while luke warm(with a dash more sugar to give it a more dessert-like flavor). But really this recipe is the perfect one to play around with because the outcomes are endless!

Tangy Barbecued Beef

Excellent! A few minor changes (because of what I had on hand) not even worth mentioning, but it was great with my leftover roast beef. It has a nice, robust flavor. Can't wait to try this one with chicken.
