Catherine's Sirloin Tip Roast

This was a good recipe, but I will make it in the crock pot next time. I added some salt, worstechir sauce, and some gravy masters. Then I added a bit of beef broth to the pan to make a nice gravy for mashed potatoes. My daughter asked for seconds and she never does that :)

Baked Slow Cooker Chicken

Very good simple recipe...but don't be fooled. I have read most of the comments and variations. Here's mine. A. Strip all skin off the chicken or use chicken breast. (With a whole chicken you will get an amazing chicken soup). B. The aluminum foil balls do work. C. Even with quite a bit of seasoning (I used sage, salt, pepper and paprika) the end result is a "bland" taste. D. I cannot see how you can cook a 4.5 pound chicken more than 2-3 hours on high or 3-5 hours on low or 2 hours on high and 2 hours on low. (The original recipe calls for a 2-3 pound chicken) E. You can try the variations of other reviewers or simply save your seasoning for the last 1 hour of cooking. Also try http://allrecipes.com/Recipe/Busy-Day-Chicken/Detail.aspx which uses BBQ sauce variations that add much more flavor.

Garden Pasta Salad

I used Romano cheese and bottled Italian salad dressing, adding enough dressing to season until I was leaving for get together and then added more, as it had all been soaked up by pasta, and carried in a large zip loc bag. The cheese adds a salty flavor so be careful if you season. I cut grape tomatoes in half and also added broccoli florets and black olives to other veggies. Quick and easy. Loved it.

Baked Oatmeal I

This was so good! I halved it for my small family and baked it in a pyrex for 30 minutes, after letting it sit at room temp while the oven preheated. I also made the unsweetened applesauce for oil substitution. Next time, I think I'll add less sugar to the mix as it was a bit too sweet to feel healthy :)

Baked Zucchini Chips

I had a huge zucchini given to me by a neighbor, so I gave this recipe a try. It tasted a lot like eggplant parmigiana, but I was looking for something crispier. If I try this again, I'll try to slice even thinner. Personally though, I think zucchini is best marinated in Italian dressing and grilled on a skewer!

Antipasto Pasta Salad

This was pretty good and keep in mind that it makes a ton! I nixed the black olives and used a light balsamic vinaigrette dressing instead of the packet + vinegar + oil. I wasn't a huge fan of the cubed Asiago cheese, I think next time I'll finely shred it. The flavor was just a little too strong in cube form!

Eggplant Casserole

Everyone at the table loved this dish. I added some garlic and garlic salt to the beef and veggies while cooking. I also added a few sweet peppers and shredded cheese. The final touch was some parmesean mixed in with the bread crumbs and butter. Will definitly make this again :)

Creamy White Wine Sauce

This is a good base sauce, but I found it to be very salty, however when I paired with lightly seasoned chicken the salt was not as strong. I will try this again with less salt.

Barlow's Blackened Catfish

I make a very very altered version of this recipe, but it turns out fantastic! Basically I thaw my catfish fillets, rinse, then cover with Cajun seasoning. I fry them up in hot olive oil for ~2 mins/side. Then, I cover with the Italian dressing and bake at 350 for 20 mins. It's really good and simple! Serve with green beans and lo-sodium dirty rice mix minus the ground beef.

Actually Delicious Turkey Burgers

For 1 lb of ground turkey, making 4 burgers: ~3 Tbsp onion, handful of parsley, 1/4 cup bread crumbs, 2 garlic cloves (this may have been too much), salt, pepper, seasoning salt, some worcestershire sauce. I did lightly flour the patties before frying, 6 mins/side. Served with lettuce, tomato, mayo on wheat rolls. Yum!

Great basic recipe. I make a million modifications, though! More macaroni, boiled/chopped chicken breasts, more cheese (Mexican blend), just 1.5 cups milk, add fresh mushrooms, onion, frozen peas & carrots, substitute cream of mushroom for one of the cream of chickens - and use lo sodium soup!

Meatball Sandwich

This is a great recipe, and so much easier than the meatballs I traditionally make. No pre-frying, just bake and you're set! So good that my husband came home for lunch so that I could warm them up special for him (just not the same in the microwave, I guess!) I thought they were a little dense, though, but I added 2 eggs so that might be my fault.

Mmm-Mmm Better Brownies

WOW! These brownies are incredible! I made the butter substitution. They were really fudgy, but tough to get out of the pan looking nice. Who cares though when they tasted this great!
