I am married, 5 years this year, to a great man. We have a puppy, she is 5 months old. I am a breast cancer survivor, 2 year survivor this year and still going! I became interested in cooking after being diagnosed because I want to be healthy so I never get it again. I am getting better and better each day. As I cook I like eating out less and less so that is a good thing! My husband likes my cooking more than his mother's, wow!!

Four Cheese Macaroni

I make this all the time and it's fantastic! There are several required modifications, which is why I put it at a four stars: (1) Use 4 Tbsp max of butter when first mixing with the pasta, 9 is overkill (2) Use 1 cup mozz, 2 cups cheddar/jack blend, 1 cup sharp cheddar for the shredded mix, only add 3 cups of this to start with (3) Omit Eggs (4) Halfway through baking, remove the dish and mix up to better combine the melted Velveeta and shredded cheeses. Then add the remaining 1 cup of shredded mixture on top to give some crunch to the top layer.

Gingerbread Men

I was in the mood to make gingerbread, so I looked for the easiest recipe I could find - this was it! The dough was easy to work with and was flexible enough to add some flour during rolling. The ginger flavor was great but not too overwhelming. Regarding texture, the response I most often got was "These are the softest gingerbread cookies I've ever had!" I decorated by just putting canned frosting in a ziploc, snipping a teeny tiny corner and piping. Good times!

Tortellini Soup I

This soup was incredible! I used chicken broth instead of beef broth and added extra tomatoes and zucchini. The flavor of the spicy Italian sausage was amazing. This is the best soup I've ever made! (Jamie's Minestrone on this site is the second best!)
