Asian Pasta Salad

I found this pasta salad to be a great change of pace. I left the broccoli raw, to add flavor and crunch. It is a very simple to do, tasty dish.

Hazel's Cranberry Sauce

Peanut Rice

I used jasmine rice for this recipe (which is what I had on hand). Instead of putting in the peas, I got a Green Giant frozen package (10 oz box) of peas, mushrooms with an herbed flavor packet to mix in, which I combined with the rice and topped with almond slivers. The result was yummy.

Howler Cookies

This is a good recipe for cookies full of flavor (and not chocolate!). I decreased the white sugar to 3/4 cup, put in 1-1/2 tsp vanilla and used self-rising flour. I also lined the cookie sheets with foil, rather than greasing them (I felt the cookies had enough butter in them to prevent sticking), which worked like a charm. This recipe made about 40 cookies for me, but I used a heaping teaspoon of dough for each cookie. The dough was not the least bit dry, perhaps because I used an extra large egg with just the smallest bit of extra vanilla. A good cookie.

Crazy Crust Pizza Dough

This came out great. I didn't have any yeast, so I didn't expect it to be like normal pizza dough. The edges rolled up all by themselves which made it good in holding the toppings and forming an edge. My kids loved it. The middle didn't cook as much as I would have liked it too, but otherwise it was great in a pinch.

This dish does have a very good flavor, however, it needs to either be served over rice, or as a shepard's pie with mashed potatoes placed on top of the casserole. The flavor is great but just needed to be served over or with something. Will make this again, as my husband rhapsodized about it.

Pumpkin Cheese Bread II

It is a great recipe. I made it in a bundt pan and wouldn't make it any other way. Fresh orange zest is definitely the way to go with this cream cheese filling. I used pumpkin pie canned filling (by mistake) and didn't realize that's what I was using until I had already spiced up the batter. I was afraid that would make the cake too spicy, but it was delicious. I also added about a teaspoon of vanilla to the batter. Good recipe, though a little labor intensive. Update, Christmas 2006: I have made this recipe with a couple other variations, including using 12 oz of cream cheese for the filling; this is such a good recipe, just needs more "batter". I make it in the bundt pan each time I make it. The filling would probably be great (with or without the orange zest) in most any pound cake (umm, chocolate pound cake with the filling with the orange zest, bet that would be fabulous!). Thanks for this recipe.

Quick Yeast Rolls

I can't imagine why the raves; the proportions were so off on this recipe that I might as well have rewritten them; the dough was too sticky to work with in even shaping balls to go into the muffin tin; I probably added 3/4 cup flour, which in turn made 12 rolls. I made these rolls again with my own changes and they were much better. I substituted 3 tablespoons honey for the sugar, reduced the water to 2/3 cup; made it with 1-3/4 cups whole wheat flour and 3/4 cups white flour (as per the suggestion of another reviewer); this made the outcome perfect. I would suggest reducing the water to 2/3 cup to make the dough less sticky and easy to work.

Cream Cheese-Filled Coffeecake With Fruit Preserves and Crumble Topping

I thought this was rather bland, and was disappointed that I couldn't really taste the cream cheese filling as much as I would have liked. Lots of work. I did substitute a half cup of sour cream for the yogurt, since I didn't have any yogurt on hand. It was a moist, if bland, coffee cake.

Easy Rich Chocolate Cake

I can't imagine what I did differently from the other reviewers, but I was not impressed with the filling of this cake. I normally love cream cheese filling, but this turned out runny and WAY TOO SWEET. The cake base/pastry is wonderful, I would concoct a different filling, one more in line with a cheese cake filling that is not so runny and not so sweet. This smelled much better than it tasted, in my experience with it.

Texas Sheet Cake V

I made this cake for a staff meeting held today; it was a hit. I substituted self-rising flour for the flour, soda and salt, it worked just as well. The biggest complaint I have is the prep time was much longer than 10 minutes for me (having to cook part of the cake ingredients as well as the icing), and the icing was way too thick to spread; I had to add more milk to get a spreading consistency. I remember this cake having a teaspoon of cinnamon in the batter, which I added; with my little modifications, this was a good cake. I also lined the jelly roll pan with foil which I find works better than prepping with butter/shortening and flour. I would make this cake again, especially to serve a crowd of chocolate lovers.

Chocolate Earthquake Cake II

I added an egg to the cream cheese mixture (like a cheese danish filling), and it came out well, almost "three tiered", and wasn't ugly at all! It was easy to slice and almost looked like "brownies with cream cheese." I made it with the German Chocolate cake mix, and would recommend trying that first. This was an easy and great cake.
