Creamy Split Pea Soup

Reviewed: Nov. 7, 2009
I made a few changes. First I soaked and entire bag (14oz) peas in cold water overnight and changed the water a couple times. Second I cooked the peas in three cans of chicken stock and about a cup of water instead of all water until the peas were soft. And third I used half-n-half instead of heavy cream. Then after pureeing all the ingredients I added more cubed ham (about a cup and a half). So it wasn't all creamy. It turned out very good, but made a lot for two people. I decided to freeze some for another day. I will make again, but will probably only puree half of it to keep a little chunkyness to the soup.

Dark Chocolate Cake I

Reviewed: Sep. 16, 2009
This is a lovely cake. I used the coffee variation instead of boiling water. I also used homemade cherry jam to spread between the layers, then used a mocha icing to cover and decorate the cake. It was a big hit at the dinner party I took it to. I'll be making this cake again today for my nephew's 7th birthday, without the coffee. This cake has an excellent moist, slightly dense texture that keeps it from being too crumby. Also, the recipe is super easy.

My husband and I loved this recipe. Very moist and flavorful. The glaze was delicious, I'm glad I doubled it. I'll definitely make this again!

This was pretty bland. I don't have to have creamy mac and cheese, but I do want more flavor than this recipe offered. I will keep looking.

Kentucky Hot Brown

Reviewed: Aug. 27, 2009
I was born and raised in KY and have always been a fan of the hot brown! This recipes was very good! The only thing I changed was I used 1 1/2 C shredded cheddar and 1/2C shredded parmesan(I have always had them with a cheddar sauce)! I also omitted the mushrooms because we don't use them back home on hot browns! Over all I thought it was very close to the original! Thanks!

Slow Cooker Chicken and Dumplings

Reviewed: Jun. 29, 2009
Five stars with modifications. I used 6 chicken breast halves (left whole until 4 hours into cooking time). Added one bag of mixed vegetables. I didn't put any chicken broth in (better than water) until after putting in the biscuits which definitely needs to cook for 1 1/2 hours. I cut the biscuits into four pieces and stirred them into the chicken mixture. BONUS: I used a Montreal Chicken seasoning (1/4 cup) and fresh cracked black pepper. Seasoning was perfect! My husband said this recipe is so comforting. Even in the hot summer we enjoyed this dish!

Incredibly Cheesy Turkey Meatloaf

Reviewed: Jun. 26, 2009
The mixture filled up my stoneware loaf pan to the top so I needed a baking sheet underneath to catch the drippings. This was very moist as I did soak the bread crumbs in the milk BEFORE mixing with the ground turkey. I will make this again and again.

Exchange Gang Pasta with Shrimp

Reviewed: Jun. 1, 2009
Wonderful recipe! I used sun-dried tomatoes packed in oil instead of fresh. I did place the tomatoes in paper towels to absorb some of the oil to keep the dish from being to oily. I used a 6 oz bag of baby spinch too. My husband said he felt this was restaurant quality!

My Best Clam Chowder

Reviewed: May 19, 2009
This was my first attempt at Clam Chowder. It was very good. I used the suggestion of another and added 6 strips of cooked crumbled bacon. I also sauteed the veggies in some of the bacon grease and then added the clam juice till the veggies were tender. I also added cut up cooked shrimp and some flaked crab meat. I did not add the red wine vinegar. It was awesome and my boyfriend loved it and I've made it now several times. Thanks -Great recipe!

Easy Chicken and Broccoli Casserole

Reviewed: Apr. 26, 2009
Hi! This is my recipe. I always cook the rice in the microwave because it's faster. I add 1 c. uncooked rice and 2 c. water in a large bowl, cover with plastic wrap and microwave for around 20 mins. Also, I steam the broccoli. You can also use 2 pkgs of frozen broccoli to save cook time. The recipe takes a while to make, but it is worth it. You can also make it the day ahead of time and bake in the oven when you are ready to eat. It might need a little longer to bake if its chilled all the way through. Enjoy!

Meatloaf Cordon Bleu

Reviewed: Feb. 24, 2009
Yummy! I made this for dinner last night with only slight changes, I used Ground Turkey in place of Beef (we don't eat ground beef) I basically made my meatloaf as I always do (which is pretty much the same as this Recipe) I added some thinly sliced green onions because I had them, and a very little ketchup & mustard! I used Deli Selects Ham and sliced Mozzarella (it's what I had). Cooked for about 45 minutes. It sliced up beautifully and my family LOVED it especially the Kids! I Served it with California Blend Veggies & an iceberg Salad! Can't wait for the leftovers!!

Easy Garlic Broiled Chicken

Reviewed: Jan. 8, 2009
Although I didn't have ALL of the ingredients, I used skinless breasts, the butter, garlic, soy sauce, and pepper. Followed the recipe except I baked in the oven as some others have at 350 for about 30 minutes. This stuff made my whole house smell SOOOOO good! (Gotta be the gahhhlic)! I am a barbeque fanatic, but I'm thinkin' of trying more stuff in the oven now!!! This is definitely a keeper!
