Pumpkin Cheesecake I

My daughter made this for Thanksgiving and everyone raved about it, even the pumpkin haters. She made it a second time to take to a party but we didn't have 2 pkgs. of vanilla pudding. So, we used 1 vanilla and 1 butterscotch; it was great too!

Easy Broccoli Quiche

I followed as listed and it worked fine. I did need to cook an additional 10min since it was still watery in the middle. (I did used frozen broccoli and drained most of the water out and added garlic while cooking broccoli)

Basil Butter

Was amazing! Great way to freeze fresh basil for future use. We put it on fresh corn cobs and grilled wrapped in foil. Infused fabulous flavor on the corn.

Easy Pesto

Chicken Costa Brava

I thoroughly enjoyed this meal! It has moved up to one of my permanent favorites. I had with rice and then the left overs with noodles. I really liked it on the noodles! A very colorful dish as well!

Best Bread Machine Bread

I added the extra salt that was mentioned and it is great. I am letting the bread do a 2nd rise in the oven over a hot pan of water to have a controlled environment. Rises for 1 hour then I cook at 350 for 30min. Beautiful each time!

Tart Lemon Ice Cream

Oh yeah, this is the best lemon ice cream I'm sure I'll ever eat!! Instead of using a food processor, I grated the lemon zest on a hand grater. Much easier. I used the juice and zest from two lemons, and it was perfect. It was so good, in fact, that I didn't share with my family! They'll have to make their own ice cream...

Vickie's Beer Bread

I sent my daughter to the grocery store for flour and she brought back self-rising flour by mistake. I did not want it to just sit on my pantry shelf, so I looked up things that used this kind of flour. I never, ever, baked bread before, though it was too much trouble. But, I decided to try it. Mom's Rum Cake

Thanks Laura for sharing your Mom's very tasty rum cake! I mistakenly added the rum glaze to the bottom of the cake instead of the top. When I turned the cake upright onto a platter, I realized my mistake. I felt I should redeem myself by making more glaze for the top of the cake or no one would be able to taste the rum. Well, obviously doubling the glaze is not necessarily a bad thing, because I had more compliments on that cake than any other I've ever made! Several friends asked if they could take a slice home. I refrigerated my leftover slice and had it the next morning with my coffee. YUM! I liked it even better when it was cold. Yes, I'll be making this one again.

Grandma's Gingersnap Cookies

Wow! These chewy spicy cookies were terrific! I followed the recipe closely, but I added 1/2 tsp. of nutmeg for more flavor. I chilled the cookie dough overnight, and they came out soft and chewy after baking. I took them to a church event, and everyone who tried one said they were delicious. Even my fussy son who prefers chocolate chip cookies liked these. He took all the leftover gingersnaps back to college with him. Yum!

Forgotten Party Cookies

These cookies are an old favorite that I hadn't made in years. I followed the recipe pretty closely, but I added chocolate chips and almond extract to the cookies. I could taste the sweet crunchy flavor and texture of the cookies, but they were really too sweet for me. Next time, I may trying adding sifted cocoa to the recipe to increase the flavor and make it a little less sweet.

Apple Crisp II

Thanks, Diane, for a delicious apple crisp! I did end up having to increase the butter when I spread the crumbly topping over the apples. Without the extra butter, it would have been too dry. Otherwise, it was very good. I cut the recipe down for just my husband and myself. My husband was very disappointed when he realized I had eaten the leftovers the next day. I guess I'd better make more the next time so we can both have seconds!
