Peanut Butter Cupcakes

These were so good - light,fluffy and moist. Even people who "don't really like paenut butter" loved these. I covered them with homemade chocolate frosting and Reeses Pieces crumbles. Yum Yum.

Cherry Cobbler II

OK, I have to say, this is so simple and delicious. I cannot believe there aren't more reviews. I used NO butter, I never do, and sprayed the 9X9 pan with Pam. I used a can of black cherries in syrup and drained them. I cup up fresh strawberries and added a bit of sugar to them both. Cooked everything as said and it was so delicious!! Thank you for a recipe so wonderful!!

Spinach Brownies

My favorite recipe-only thing i do-a bit of olive oil instead of butter. I also put onion in chopper first-Amazing-yummy-Add to it as you desire-seasoning wise!!

Three Berry Pie

This is Amazing pie. I added some blackberries and 1 apple to help "fill" the pie. I halved the sugar and added 3 packs of splenda. You DO NOT have to ADD more CORNSTARCH if using FRESH BERRIES. My husband and I are health nuts and this is the perfect dessert for us!! I added a bit of powder sugar to our slices.

Banana Banana Bread

This is the BEST banana bread ever. I even subsituted 1/2 cup whole wheat flour and the smart balance butter blend and it was amazing. Also, as always I added tbsp vanilla just because I love it. My family loved it. Finally, moist and delicious banana bread.

Grilled Tropical Tuna Steaks

Tried this last night.I had bluefin tuna right off the fishing boat.Wasn't sure if I would like this marinade,but am really glad I tried it. It came out great.I did however make two small changes,I used crushed pineapple,because I didn't have preserves ,and because I don't like sesame oil,used regular olive oil.It was grilled to just rare and served over a salad with a light lime vinaigrette.I am sure this recipe will stay in my recipe box and used regularly.

Three Cheese Spaghetti Pie

One of my oldest recipes. Minus the pie crust-The spaghetti is crust enough and I also slice up meatballs instead of ground beef. Always delicious!!

All Day Apple Butter

Absolutely delicious! You really can use a cup of sugar and it's still pretty sweet. Also, it seemed kind of thin towards the end, but in the last hour, 9 1/2 exactly, the apples started to turn into the apple butter consistancy and it was perfect!!! I love having such a great easy recipe. We like it a bit chunky so I chopped by hand and it was still pretty creamy. It lasts a long time, too!

Passover Chocolate Mandelbrot

These were really good. I also baked the 2 loaves, then sliced them after they baked for 55 minutes, sprinkled on more cinnamon sugar and then baked on each side for an additional 10 minutesper side. I made them for my Jewish friends for Passover. Everybody loved them. I will be making another batch tomorrow to keep! I am also going to try cranberries and white chocolate.

To Die For Blueberry Muffins

This is one truely versatile recipe. I love it. I used 1/2 whole wheat four added chocolate bits of candy-kisses, mini chocolate eggs, etc...had no blueberries today. Also, I used canola oil instead of butter for topping and it was great. I did not add vanilla as others said and it was wonderful. 6 big muffins is all I got but that was plenty for us!! Thanks for the recipe!

Ninety Minute Cinnamon Rolls

I got up this morning and began this recipe at 8:00 a.m. True to the recipe title, they were done in 90 minutes! The dough was soft and flavorful and not too sweet. Much of the brown sugar mixture melted out of the rolls so next time (and there will be a next time!)I'll reduce the brown sugar to 3/4 c. I'll bake them in a 9 x 13-inch pan and but place a few chopped pecans in the bottom before I put the rolls in. When the brown sugar mixture melts out, it will combine with the pecans and make a "sticky bun" cinnamon roll. Then I'll invert the rolls onto a serving platter. I can't wait!

Broccoli Quiche with Mashed Potato Crust

I love this quiche. I use the leftover mashed potatoes that I buy in a tub. Any flavor is great!! I also add whatever is in the fridge and it is always amazing!!
