Quinoa Pudding

Actually I'd give this 4.5 stars. I used red quinoa, maple syrup instead of sugar and skim milk. It didn't want to thicken up for me though, so I added an egg yolk after 20 minutes of simmering then brought to a boil for 3 minutes. That did the trick. Stirred in vanilla and raisins. Delicious! Thank you so much for the great idea!

Turkey Goulash

This turned out very good! I used ingredient substitutes that I had on hand. Ground chicken breast, a can of diced tomatoes with green peppers & onion, and Prego Chunky Garden Italian Mushroom Supreme with portobello mushrooms sauce. I used fresh chopped basil that I'm growing, probably about 1 Tbs. I added chopped red onion, paprika, and Tabasco green pepper sauce. I also used whole wheat pasta and topped the finished dish with a little feta crumbles. Will definitely make this again and I am going to try to freeze the sauce.

Basic Chicken Salad

I use Miracle Whip instead of mayo, but other than that have been making chicken salad like this for years. To make it a little fancier for company, try adding red seedless grapes, cut in half. Delish and pretty!
