Asparagus, Feta and Couscous Salad

This turned out really good, but I did a few things differently after reading other reviews. I grilled the asparagus, which gave it a very nice flavor. I added some sliced green onions. I only used about 4 oz. of feta, which I'm glad I did because I think the full amount would be too much. Also, instead of adding the vinegar and oil, I just drizzled on a little balsamic vinaigrette dressing instead. This was a very yummy dish! I'd definitely make this again and again.

Doggy Meatloaf with Vegetables

Going by my dogs' reactions, this was a 5 star recipe! The only changes I made after reading other reviews was I boiled and mashed the potato and added it in the mix and I added cooked brown rice instead of the oats and wheat germ. I didn't cook the pieces of potato, carrots and celery around the sides. Also, I did mine in two regular-sized muffin tins sprayed with cooking spray for about 50 min. I'll be freezing all the extras. The dogs sure loved it!

Pizza Dip

This dip is so good! I mixed in about 1 cup of sour cream with the pizza sauce, and then I added finely chopped green pepper, mushrooms and black olives. I also sprinkled on some Mrs. Dash extra spicy seasoning and it gave it extra flavor. I didn't add the pepperoni or the onion, but I think next time I'll try it with some onion.

Rainbow Pasta Salad I

I put my own spin this recipe and everyone loved it. I followed the recipe except I used grilled red pepper, zuchini, and squash. I used one can of sliced black olives and about a cup of sliced grape tomatoes. Also, the dressing I used was red pepper vinaigrette with parmesan and I also added extra seasonings and more parmesan. I like that you can change this recipe around to your liking.

Cherry Pie IV

I only gave this 4 stars because I didn't make the crust. The filling, though, was out of this world! I used 4 cups of tart cherries from a tree and it took me about an hour to pit them. I followed the rest of the recipe and it turned out great! The amount of sugar and the almond extract offset the tartness of the cherries and the juice jelled up nicely instead of being too liquidy. Next time, though, I'll double the filling because my pie plate is big. Thanks for the great recipe!

Orange Curried Chicken

Quick and Easy Green Chile Chicken Enchilada Casserole

This is very similar to the way I make enchilada casserole. I boil then shred the chicken breasts, I dip tortillas in hot oil for a second on each side to soften, then drain on paper towels, I dip the tortillas in the enchilada sauce and layer them and then I mix sour cream with the chicken and put a layer of that followed with cheese, and then I reapeat the layers, ending with tortillas on the top. I also sprinkle a little cilantro between the layers for extra flavor. After baking we cut this into squares and serve with sour cream, diced tomatoes, black olives and cilantro on top. So yummy!

Seafood Pasta Salad

This was very good! I added extra mayo, milk, salt and pepper, and I also added a pound of cut up shrimp. I think this would be really good with some Old Bay, green onions and black olives for some extra flavor.

Coconut Bon Bons

Definitely put dough in freezer for an hour or so, and it helps to freeze the little dough balls on a cookie sheet lined with waxed paper before dipping them in chocolate. I like dipping mine in the melted candy wafers you use for candy making, and I prefer to use white instead of chocolate. It also helps to place the dough balls on a fork and dip into the white chocolate, sliding the fork against the side of the bowl to get the excess off and place on waxed paper. Depending on the holiday, I'll sprinkle little candy decos on them before the chocolate firms up to make them prettier. Like Valentine sprinkles, or Christmas ones. Just a few suggestions.

Cheese-Stuffed Jalapenos

These were absolutley delicious! I followed recipe except I halfed it because it was just for hubby and me. I used sharp cheddar and only boiled jalapenos for 2 min. because we like it hot. Added finely sliced green onion along with the bacon bits on the top. Baked for 10 min. and only a little of the filling came out. We'll definitely make these again and again!

Florentine Artichoke Dip

This is a great starting recipe, but with other reviewers' advice, this is what I did: I used the recommended amounts of spinach, artichoke hearts, garlic, parmesan and lemon juice. I used one 8 ounce block of cream cheese, 1/4 cup mayo and 1/4 cup sour cream. I also stirred in a little cayenne pepper. I also added in one packet of Lipton vegetable soup and dip mix and I think this is what did the trick for adding the extra flavor that it needed. It came out perfect for our taste this way. I really think that soup mix is the "missing link" in this recipe. :o)
