GREAT recipe! Loved all the seasonings, gave it all an awesome variety of flavors!!! I had a lot of mixture so I used a bigger casserole dish and used corn tortillas for that one. Had more leftover so I tried the flour tortillas even though I don't like using flour tortillas with my enchiladas. I used homemade enchilada sauce it was great! I also put some enchilada sauce on the bottom of the casserole dish then set them in. Did a couple improvisions but turned out better than I thought. Served with homemade spanish rice and horchata for dessert. It was lovely!!!!!
